I've posted a lot of our favorite Super Bowl appetizers this week, but today I thought I would toss in a dessert dip to sweeten things up a bit. My niece sent me this recipe over the summer and it was love at first bite!
Ingredients:
1/2 c unsalted butter
1/2 c light brown sugar
1/4 c creamy peanut butter
8oz package cream cheese, softened
3/4 c powdered sugar
1 tsp vanilla extract
1/2 cup mini chocolate chips
8oz package of Reese's Peanut Butter Cup Minis
Directions:
In a small saucepan, whisk together butter and brown sugar (until butter is melted) over medium heat. Bring to a boil, then remove from heat. Whisk in the peanut butter and vanilla extract. Set aside to cool.
In a large mixing bowl, beat together cream cheese and powdered sugar until creamy. Beat in butter/brown sugar mixture (that has cooled to room temperature) until combined.
By hand, stir in mini chocolate chips and Reese's Peanut Butter Cup Minis.
Serve at room temperature or chilled.
*Goes great with apples, grahams, wafer cookies, pretzels, etc.
Obviously you saved the best for last. I would make this and NOT share one bite. Reese's Peanut Butter cups are my weakness. I am not joking - I would hide it in the back of the fridge and sneak bites every time I got up to avoid sharing it.
