Tomorrow is Valentine's Day. Yippee! Or, maybe not. When you've been with your husband for 18 years, Valentine's Day seems like a novelty holiday. Jason and I haven't done the hearts and candy for each other since before we had kids. Once they came along though, we picked up on the tradition of celebrating as a family. Nothing fancy, mind you. The girls and I will maybe do a craft, Jason will bring the girls home a small box of chocolates, and I'll make dinner with love. Just kidding about that last part. They eat what I serve or they can find themselves fixing their own dinner. The dinner isn't really the star of the day, though. It's dessert that gets my family hopped up on the holiday. I try to find a new recipe every year to serve up, just to keep things fresh. I browsed through the Golden Blossom Honey recipe page, and narrowed it down to either mousse or cheesecake. I had such a hard time deciding, I actually made both. And will be hitting the gym double time to burn it all off. But it will be oh, so worth it! The desserts were scrumptious! Since it's only a day away, I thought I'd feature the Strawberry Mousse recipe since there isn't a lot of effort that goes into the preparation.
Ingredients
1/4 cup water
1 cup strawberries, pureed (about 1 1/2 pints), washed and hulled
1/3 cup GOLDEN BLOSSOM HONEY
1 Tablespoon sugar
1 teaspoon freshly squeezed lemon juice
2 cups non-dairy whipped topping

If you like strawberry smoothies, you are going to love this mousse. It tastes just like a thicker version of a strawberry smoothie! You can eat it as is, or get fancy and top it with a dollop of whipped cream, melted chocolate, or my favorite, little chocolate shavings.

DeleteYum. The volunteer group I work with has made cupcakes for our visits on Saturday. We try to keep everything sugar free. (Hospitalized children.)

ReplyDeleteWe'd get kicked out from his snoring. He does not do romantic films well, so I watch those during the day when he's at work. This year we'll be busy working on our basement anyway. Nothing says romance like putting up drywall ;)
DeleteYou found some great looking strawberries!! We just bought some and they look tired (and those were the best of the bunch). This looks/sounds great!! I do like strawberry smoothies, so pretty def. sure I'd like this too. :)
ReplyDeleteI had that problem 2 weeks ago. Not a good looking strawberry in sight! Meijer came through this time though. All their berries looked A+. They usually do around Valentine's Day though.

This is so lovely. You know you can make the exact same thing (same recipe basically) and just use coconut cream. I buy it in cans at Trader Joe's, it's fantastic.
