It's about time to break out the maracas and shake your caboose! Cinco de Mayo is right around the corner and the excitement in my family can hardly be contained. Why? Because Mexican food is awesome! Our extended family will be coming over for food and fun, which is always something to look forward to. My sister-in-law will be making her famous fried tacos and the brother-in-law has the guacamole covered, so that leaves me with trying to find something else to add to the mix that will blend easily with what is already being served. I was thinking nachos would be a good addition, so we are serving these Black Bean Nachos I found on Golden Blossom Honey.
Since we already have ground beef in our tacos, I like that this is a meat-free option. The combination of ingredients has this dish just bursting with flavor! Lots of veggies and gooey, cheesy goodness makes this a perfect dish for your fiesta!
Ingredients
1/2 medium onion, chopped1 clove garlic, minced
1 tablespoon olive oil
1 (15 ounce can) black beans, drained and rinsed
2 dashes Tabasco sauce
1 tablespoon GOLDEN BLOSSOM HONEY
3 medium tomatoes, chopped
1 jalapeno pepper, seeded and minced
2 scallions, chopped
1 (8 1/2 ounce) bag tortilla chips
4 ounces sharp cheddar cheese, grated
4 ounces Monterrey Jack cheese, grated
1 avocado, peeled and sliced
3 tablespoons fresh cilantro, chopped
sour cream
salt and pepper to taste

DeleteMy husband has been wanting to do more vegetarian dishes. This would work. I could have this along with veggies and fruit for dinner. NOM NOM!

DeleteWe're having five days free Holiday here around the 1st May. From Friday till Wednesday since it is both May Day and Orthodox Easter. Not that I will not be working, naturally....I will be having the busiest summer ever!
