Mother's Day sure did sneak up on up pretty quick, didn't it? There's nothing like taking a day to celebrate the amazing women in our lives. Moms are such hard workers, I think every day should be a cause to celebrate all that they do for us, but as a mom myself, I'll take the one full day of appreciation and just run with it ;)
My mom is one who doesn't like for the kids to spend a lot of money on her, and I'm the same way. Some of the most precious gifts I have ever received are covered in glue, glitter and stickers. To me, nothing beats a homemade gift. The time and effort that my girls put into handcrafting something special just for me really makes my day. Now that the kids are older, gone are the days of cards scribbled in crayon and crafty gifts have been replaced with something else that I really love... homemade breakfast in bed!
What mom wouldn't love a hot cuppa tea and a sweet muffin to start her day off right?
I am a sucker for baked goods, and if they have fruit mixed in, all the better!
That's why I am obsessed with these Banana Blueberry Oat Bran Muffins. They have a soft, fruity center and a sweet crunchy topping, making for one tasty way to start the day.
yield: 12 Muffins
Banana Blueberry Oat Bran Muffins
INGREDIENTS:
Muffin
- 1¼ cups all-purpose flour
- ¼ cup oat bran
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 3 rip bananas
- 1 cup blueberries (frozen or fresh)
- 1 egg
- ½ cup sugar
- 1/3 cup unsalted butter, melted
- ½ tsp vanilla extract
Crumb Topping
- ½ cup light brown sugar
- ¼ cup all-purpose flour
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 2 tbsp unsalted butter, cold and cubed
INSTRUCTIONS:
- Preheat the oven to 375 degrees F. Line a muffin pan with 12 liners. Spritz with cooking spray.
- Make the muffin batter: In a large bowl, combine the flour, oat bran, baking soda, baking powder, and salt. In a separate bowl, mash the bananas, then whisk in the egg, sugar, butter, and vanilla. Combine the wet ingredients into the flour mixture, stirring well until incorporated. Gently fold in the blueberries.
- Make the crumb topping: Combine all crumb topping ingredients into a medium bowl. Using a fork or pastry blender, blend until mixture crumbly.
- Scoop the muffin batter into the prepared paper liners, filling each one 3/4 full. Sprinkle the top of each muffin with the crumb topping mixture.
- Bake muffins for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

ReplyDeleteA million dollar tip from Dezzy - cut the upper parts of the muffins, mash it and mix it with one mashed banana and then spread it over again in the shape of a cone, it will give the creamy element to it. You can also put blueberry jam in it instead of a banana.
PS it is also a way to use left over, stale muffins = just mash them and mix them with a banana or jam, form into balls and dip in chocolate.

That'll be a fun day, and just what I want to celebrate. :) The muffins look delicious, and I agree if there's fruit in baked goods, it just makes a good thing even better.
