Well, the day is just about upon us. Today marks the last day of summer vacation and Allison is less than thrilled that tomorrow she'll be walking into the school as an official 8th grader. I admit, it would be nice if we could stretch the summer out a wee bit longer, but then again, I am looking forward to the normalcy that the school year routine brings. This year won't be so hectic for me since I'm down to having to corral only one kid in the morning, but I am still going to have to make sure I'm awake enough to pack her a nutritious lunch for school. I don't know about you guys, but even with the menu changes in recent years, school lunches here are atrocious so I make sure Allison has good food to fuel her body and brain so she can finish the school day on a high note.
In recent years, I've become a huge fan of chia seeds. I sprinkle them in our smoothies, oatmeal, yogurt and puddings. Not only do I like the texture they add to my recipes, I love the health benefits you get from them too. Chia seeds are the richest plant-based source of Omega-3s and are a great source of dietary fiber and complete protein. That's why I am looking to Mamma Chia® this school year to help us power through our day.

While she does love to eat the granola straight from the package, I did whip us up some easy-to-make Blueberry Fool layered with the Wild Blueberry Clusters that will also make for a delicious after school snack.
Yield: Serves 4
Easy Chia Blueberry Fool
INGREDIENTS:
- 2 cups fresh blueberries, rinsed
- 2 tbsp water
- 1/2 cup sugar
- 2 cups heavy whipping cream
- 1 tsp pure vanilla extract
- 1 cup Mamma Chia® Wild Blueberry Clusters Granola
INSTRUCTIONS:
- Over medium heat, cook the blueberries, water and sugar for 10 minutes, stirring occasionally. Remove from heat, set aside to cool.
- Pour the whipping cream into the mixing bowl and beat with an electric mixer on high speed until soft peaks form. Stir in vanilla.
- Stir the cooled blueberry mixture into the whipping cream until completely incorporated. Refrigerate for 2 hours.
- Spoon the dessert into the bottom of 4 serving glasses. Layer with the granola, then top with more blueberry cream mixture. Garnish with mint, fresh blueberries, and more chia seeds if desired. Serve.

ReplyDeleteLove how you did the fool whatever that is :), so lovely! I've never put chia in beverages so far, but I do like to grind it in my morning bread spread. Do chia seeds fall apart in our belly when you swallow them whole? :)

I imagine they digest just fine whole since I've never had a problem with them. I have never ground up my chia seeds because I like the grainy texture they give to my dishes and I love that little crunch you get when you bite into them.

DeleteNo, no tears this time. Her room is small and ugly, but with a few decorations, she could spruce it up. She did get a lovely roommate. One of her best friends from school got accepted there too, so they were able to request a room together. It all seems to be working out really well for her.

ReplyDeleteThe clusters look really good but the drink w/ seeds kind of frightens me. I choke drinking water half the time...haha! Seriously, do they go down smoothly? Because I'd love to get more Omega-3s in my diet.
ReplyDeleteYes, they go down very smooth. The seeds in the beverage are a lot softer than eating them raw since they've been sitting in liquid. I'd say the consistency of these drink would be comparable to softened jell-o, so if you can swallow jell-o, you could handle these just fine :)

ReplyDeleteAwesome - I want to try the clusters (no particular flavor) - they look good. Also, I think this would be good for my son, since he also has an autoimmune disease and can't eat gluten. We are always looking for good, healthy snacks for him. These would be great! :)
ReplyDeleteYes, these would make a great snack for him. It's so hard finding good foods when you have food sensitivities, so I am super happy Mamma Chia has been put on our radar because I have no problem with the ingredients.

I prefer not to drink my calories, so I'd pass on the beverage, but the granola clusters look really delicious. I'm going to try them. Your daughter Allison is a good sport ~ and very pretty too! ReplyDeleteI've always liked chia seeds and I would usually add it to my over night oats or my smoothies, it's the best! It has a lot of benefits and it's really good. I'm glad we have brands like Mamma Chia to rely on for our chia fix!
