Because I have awesome in-laws, I haven't had to host a Thanksgiving dinner for the past several years. It's stressful having to prepare dinner for a huge crowd. You spend half a day in the kitchen getting everything together, then 15 minutes after the table is set the dinner has been gobbled up. I'm glad my mother-in-law takes over cooking up the meal, but it does make me a bit sad that we don't get those holiday leftovers. Instead of going out into the madness on Black Friday, I thought I'd stay in and make a mini Thanksgiving dinner for just my family. Instead of roasting a huge turkey, I'll make Jason and the girls some Honey Glazed Cornish Game Hens from a recipe I got off of Golden Blossom Honey.
This is a very simple recipe to follow, without a lot of prep work, so I can still feel like I've made a holiday dinner without a lot of fuss. Plus, I don't have to run back and forth to the oven multiple times to baste the meat so I'll spend less time in the kitchen and more time to putting up our tree and Christmas decorations.
Ingredients
4 Cornish hens1 apple, quartered
1 orange, quartered
1 medium onion, quartered
2 tablespoons butter or margarine, melted
salt and pepper, to taste
Glaze:
3 tablespoons GOLDEN BLOSSOM HONEY
1 tablespoon orange juice
1 teaspoon orange zest

DeleteMariah is on break starting this Tuesday, but we can't go get her until Wednesday morning since Jason already had plans to meet a co-worker that lives in her area that day. She'll go back Sunday night, so we'll have 5 days with her. The family is looking forward to her visit :)
DeleteHell no I don't go out in that Black Friday mess. We buy everything online. I stay in, blast the holiday music, then we get to work putting up the decorations. It takes half a day just to do that, then we'll start in on our holiday movie binge :)

DeleteOooh - those look good. I have never actually had cornish hen...not sure why, but we just never had them growing up, and my husband didn't either. This recipe looks awesome, though.
ReplyDeleteI always try to get my tree put up the weekend after Thanksgiving - however, we usually have guests, so it can be tricky. If not Thanksgiving weekend, then the following for sure - as long as it's up by my daughter's birthday, on the 5th, I'm happy!
I never did either until we went to Medieval Times a few years back. They serve the hens as the main dish. The family really like it, but we never made them on our own until earlier this week when I tried out the recipe. Thankfully, I didn't butcher it lol.
DeleteHave your guests help put up the decorations. I'd trick them into thinking it should be a new ritual that everyone chips in ;) You have a Christmas month baby too? I bet she hates having a December birthday. Mine is on the 23rd, so my mom always celebrated my birthday in August with my sister because my family was always giving me a cheap gift and saying it was a birthday and Christmas present.
Yes - my baby girls bday is December 5th, and mine is the 16th - so we both totally understand being cheated. My parents were always really great about separating the two, but extended family and friends had a tendency to combine gifts. I try to make sure Abby's birthday is special. This year she wants to take some friends to Dave and Busters - which is a couple hours away. I've never been, so I'm kinda excited about it!
DeleteYou guys are so much like us. Jason is the 18th, Allison is the 19th, mine is the 23rd, plus add in all the holiday parties and such, I feel your stress levels are probably equal to mine this time of year.

I haven't had a cornish hen in years. My mom used to make them all the time, but for some reason they never made it onto the menu at my house. I need to make some soon!

ReplyDeleteYour post brought back memories of a Canadian Thanksgiving that a fellow student geologist and I had to spend in the field water sampling. We decided to treat ourselves to a great dinner at a restaurant at the suggestion of our boss in Toronto. We thought we were so sophisticated ordering Cornish hens, a luxury in Nova Scotia at that time.
I love maple syrup as a glaze for roasted vegetables. Like you, I clean out the fridge when making them! I even add beets. I'll be looking for those Simple Potatoes chopped sweet potatoes. I wonder if they do beets too?
For southerners it's pecan or praline pies ~ For this Nova Scotian gal it's cranberry raisin pie all the way!
Like you, I shop at several stores: warehouse for bulk items, big box for staples, and my local grocery store for fresh produce and meat. Your Bakerly brioche onion and mushroom sandwiches looked scrumptious. I regretfully decided to pass on the giveaway. I'm traveling ~ again!

DeleteThe first time I had a Cornish hen was at Medieval Times. We thought we were being quite sophisticated too, until we realized they weren't bringing us silverware since they didn't use eating utensils back then, ha!
It would be awesome if they did beets too, but sadly they are just a potato brand.
