Confession: As soon as I pack up our Christmas decorations, I immediately put up our Valentine's decor, so our house has already been in Valentine's mode for almost a month now. It's not that I love the holiday. I just hate the lull between the holidays and how bare my house looks without festive decorations filling the empty spaces. Jason and I don't really celebrate the day by exchanging gifts or anything like that. We do get the girls a small box of chocolates and maybe make a special meal for the entire family to enjoy. This year I have an infusion scheduled on Valentine's Day, so I won't be doing much of anything except sleeping the day away once I get home. To make up for not making a family dinner, I plan on whipping up a special breakfast the weekend before and we'll celebrate then. Since strawberries have been super cheap lately, I did a trial run last week on these Strawberry Surprise Pancakes from Golden Blossom Honey.
What says I Love You like a heaping mound of pancakes topped with a yummy strawberry sauce? These pancakes are tasty as is, but I think you could make them extra special by chopping up more strawberries and putting them in the batter.
I'd take a plate full of Strawberry Surprise Pancakes over a dozen roses any day of the week. Then again, I am a simple girl and it doesn't take much to please me. Grab a skillet and whip up a few batches for your Valentine this year. This is a recipe that will have little hearts floating over your love's head once presented with a plate of these pancakes.
Ingredients
Sauce: 2 Tablespoons GOLDEN BLOSSOM HONEY
1 Tablespoon lemon juice
1 pint strawberries, sliced
Pancakes:
1/3 cup quick cooking oats (not instant)
1/2 cup flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
1 1/3 cups milk
1 large egg
1 Tablespoon GOLDEN BLOSSOM HONEY
1/2 teaspoon almond extract

When do you start putting up your Valentine's Day decorations?
Well you can use the infusion as the excuse to stuff yourself with chocolate truffles after that :)

We, of course, have no strawberries here, even apples are hard to find in this part of the year, at least normal apples, potatoes are semirotten and have frostbites ... I hate this part of the year.... I usually have a crying session when grapes and tomatoes disappear in December :(
Probably during the infusion. The nurses stock lots of goodies for the chemo patients to munch on so maybe they'll bring in some chocolates this time.
DeleteI always feel so bad that we have these fruits and veggies in abundance this time of year and you do not. I wish I could share the bounty with you :( Of course, we pay through the nose for off season produce. Strawberries are expensive most of the winter, but with Valentine's Day approaching, we start seeing them marked down to summer prices. Blackberries have been very inexpensive lately too, so we've been using those a lot lately as well. I am wondering if my blackberry bushes will produce any fruit this year. I only planted them last year so they may be dormant this summer and will start to fruit next year. We'll see.
Don't feel bad :) those out of season fruit probably have no taste, right? I've found some tomatoes when I went downtown shopping last week (it is very unusual to find them in January) and they are as bland as a 'gertrude' :)
DeleteHope your blackberry grows nice and tall! We had one planted last year too, but it is not mine, so I will be sticking to my raspberries if they don't die prematurely as almost every other year.
They taste the same as summer berries. Sometimes the strawberries aren't fully ripe when they hit the shelves so we won't buy them then.

DeleteI wish I could make pancakes that looked and tasted that good. My son loves pancakes so I have to keep trying for him. The strawberrys make them even better.

ReplyDeleteWe love pancakes with fruit in them. Blueberry pancakes are also a favorite. Since it is the season of love, red would be the popular color so strawberry pancakes it will be. :)
