Judging from how packed my gym has been this week, I'm guessing that some of you may have made some weight loss resolutions for the new year. Jason's been back on the weight loss kick for the past few months himself, so I am trying to be the supportive wife by serving low fat, healthy meals at home because more than half the weight loss battle comes from what you consume, not how much time you are putting in at the gym. Part of Jason's problem is grabbing take-out for lunch most days, so finding recipes that are quick and easy to prepare or make for good leftovers the next day that he can take to work instead of rolling through a fast food drive through for a bite has been a top priority for me. One of his favorites lately has been this White Bean & Tuna Salad from Golden Blossom Honey.
Cannelli beans are an excellent meal staple for anyone looking to eat healthy. They are a great source of fiber and protein, are low in calories, and provide the body with stable energy throughout the day. Additionally, they are heart healthy, as is the tuna in this recipe. Since my husband suffers from high blood pressure, I really like the health benefits this meal provides him. This recipe does call for canned beans, which does make this recipe really simple to toss together, but I used dry cannelli beans that I cooked in my pressure cooker. For some reason, I had a really hard time finding the dry beans at our local supermarkets, but did finally spot some at Meijer on the top shelf where they keep the organic dry beans in the rice aisle. Be sure to keep this recipe handy for quick and healthy meal solutions.
Ingredients
1 (19 ounce) can white cannellini beans, drained and rinsed1/4 cup olive oil
1 1/2 Tablespoons lemon juice
2 teaspoons GOLDEN BLOSSOM RAW HONEY
1/2 teaspoons dried oregano
2 (6 ounce) cans white albacore tuna, drained and separated into chunks
2 medium tomatoes, chopped
1 small onion, minced
2 Tablespoons fresh parsley, chopped
salt and pepper to taste

I'd like to try beans in the pressure cooker. I really want to get one of those for my kitchen. The white bean tuna salad is a great alternative to sandwiches for lunch!
ReplyDeleteI don't think I could live without my pressure cooker. I use mine at least 3 times a week. I agree, this is a great alternative to the boring sandwich any day!
DeleteI think American diet problem is that your biggest meal is supper instead of lunch. When you eat a big cooked meal for lunch and just a sammich for dindins, your body can digest it better and you gain less pounds. Eating all meals within ten hours is also a good thingaling.
ReplyDeleteTuna was the last meat I ate before going full vegetarian :) I once ate a bad can and ditched it too for evah.

That, along with our sedentary lifestyle and reliance on prepackaged junk foods. I never liked any kind of seafood myself, except for shrimp. Jason likes it all though, and even though Allison is picky with it, she does love sushi (yuck!)

ReplyDeleteWhy don't you pack your own lunch for when you have to be out and about? I am not a huge fan of eating at restaurants, so I tend to pack my own lunch when I have to be away from the house.

ReplyDeleteThis sounds delicious, Theresa! I'm trying to incorporate more beans into our meals because they stick to your ribs the way oatmeal does. For decades I made brown bag lunches for my husband and me, almost always with sandwiches, cut veggies, and cut fruit. Now that we're retired, I'm still making the same basic meals for lunch. I have to put in some serious time at the gym ~ December was a crazy month, and I slacked off too much. Good luck to you and your husband as you tackle health and fitness in the new year!
