Penne for Your Thoughts?

I've been feeling a little tired and sluggish this week. We got slammed with snow over the weekend, and now it's raining which is making the entire outside look like a horror scene from Stephen King's "The Mist". It's been a real doom and gloom week, which is definitely contributing to my laziness. Thinking about what to make for dinner hasn't been at the top of things I feel like messing with this week, so if it isn't fast and easy, it isn't getting made. That's why we always keep a variety of pasta on hand. It's one of those dinner staples that I can always turn to for a quick meal that doesn't take a lot of effort on my part. This Penne Pasta with Grilled Vegetables recipe from Golden Blossom Honey is a great mealtime solution for when you just want to get in the kitchen and get dinner done without a lot of fanfare. 

Penne Pasta with Grilled Vegetables

It's tasty, it's filling, and best of all, it's a simple recipe to toss together. Serve it alongside a store bought crusty baguette and you've got a great lazy day meal. 

Ingredients
Vegetables:
1 large eggplant, trim off ends and cut into 1/2 inch thick rounds
2 large ripe tomatoes, cut in half
1 tablespoon olive oil
salt and pepper to taste
1 tablespoon GOLDEN BLOSSOM RAW HONEY
Pasta:
8 ounces penne pasta
1/4 cup fresh Italian parsley, chopped
2 tablespoons olive oil
1 large clove garlic, minced
1/4 cup Parmesan cheese, grated

    Bears Honey and Gordana from our local ZOO have come out of their lairs this week which means spring is on its way! We had ugly wet snow mixed with rain too last weekend and everything is squishy and muddy now, but I'm guessing plants will start sprouting after this when sun comes back.

    1. We were dumped on, like the snowfall was halfway up my deck last weekend. It was a mess! I am so ready for spring. I planted a whole bunch of bulbs last year, so I am hoping they will sprout up this year. Lots of hyacinths and tulips. I don't know if they will be dormant for a year and come up next year or if I will get lucky and see them this spring. I do hope my blueberry and blackberry bushes do well. The blueberries did fruit last year, so we shall see.

  2. Those blah days outdoors sure do suck. Thankfully no snow here for a while, hoping it stays that way for another month and then we are out of the woods. Sure looks like one that does the trick when you just feel blah, but hopefully not sick.

  14. I wasn't aware cooking with honey looks this good! Although it is just a small amount you added, I am sure it made a difference. A pasta dish is always welcome in my family. We're going to enjoy this!

  19. Either Spaghetti or Chicken Alfredo (on quick dinner nights, we use the John Seouls pre-cooked chicken, and a bottle of Alfredo sauce) with a Caesar salad. Another go to quick recipe is Taco Soup.

    1. My daughter could eat alfredo all day every day. I love the idea of using jarred sauce, but she insists that I make it from scratch, which really doesn't play into quick mealtime solutions lol. Oh, I made those unicorn poop cupcakes and frosted them before they cooled. It melted the frosting right off lol. Whoops! I'll retry them again sometime so you can see. They would have been really pretty, I think, if I would have had some patience :)
