If it hasn't been obvious around here, I like nuts. The kind you eat, but I do have a few nuts in my family tree and I kind of like them too ;) I always have some kind of nut on hand, usually almonds or cashews, because they are a great quick and healthy snack option. They are also great for putting in my morning smoothie bowl or oatmeal to give it a little extra texture, and because nuts are filling, a small handful can tide me over until my next meal when I start to get mid morning or afternoon hunger pangs.
As much as I love nuts, I also love flavor, so when I recently heard about OLOMOMO Nut Company and saw all of their scrumptious nut favors, I was like, "Get in my belly, right now!"

So, yeah, those flavors are pretty awesome, right?! Those are what initially drew me to the brand, but what sold the deal in making OLOMOMO a household staple is their commitment to being a company with eco-friendly and ethical practices. I subscribe to the theory that simple is best when it comes to food. I don't like eating or feeding my family foods that have ingredients that I can't pronounce, and you'll only find all natural, whole food ingredients in OLOMOMO nut products. Because they roast and season the nuts in small batches with ovens or kettles, you are getting a perfect blend of flavor with each bite. Additionally, their nuts are non-GMO, Gluten Free, and Vegan and that makes my heart and tummy happy!
You can get OLOMOMO in several different sizes: 4 ounce bags or 1.25 ounce snack packs. The bags are great for sharing with my family at home, but I like to keep the small snack sized packages in my gym bag to refuel after class and in my car for when the girls start to complain that they are hungry while we are out and about.
While OLOMOMO is great on its own, I was inspired to incorporate them into a little baking I did earlier this week. Since my husband has all but banned unhealthy snack foods from the house while he works on his summer body, I got creative and tossed together some healthy ingredients to make a batch of these Dark Chocolate Cherry Almond Chewies.
This recipe has no flour or refined sugar, but is made with mashed banana, oats and cocoa, then rolled into crushed almonds and cacao nibs (a superfood that boosts energy and burns fat) so one can indulge their sweet tooth without sacrificing their health goals.
Yield: 15 cookies
Dark Chocolate Cherry Almond Chewies
INGREDIENTS:
- 1 large ripe banana
- 1/3 cup creamy peanut butter
- 3 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup Dutch-process coco powder
- 1½ cups old fashioned rolled oats
- ½ cup dried cherries
- ½ teaspoon salt
- 2 tablespoons cacao nibs
- ½ cup OLOMOMO Cherry Vanilla Almonds, finely chopped (I pulsed mine in the food processor for about 10 seconds)
INSTRUCTIONS:
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
- Combine the cacao nibs and OLOMOMO Cherry Vanilla Almonds in a small bowl. Set aside.
- In a large bowl, mash the banana, peanut butter, maple syrup, and vanilla until smooth. Stir in the coco powder, oats, cherries, and salt until just moistened.
- Lightly grease hands with cooking spray. Using a cookie scoop, scoop out dough and roll into a ball in the palm of your hands. Roll the chewie ball into the cacao nib/almond topping. Place the ball onto the prepared cookie sheet, then press flat with the bottom of a glass until the chewie is about ½ inch thick.
- Bake in preheated oven for 12 to 15 minutes, or until bottom is slightly golden brown. Allow to cool on a wire rack. Store in an airtight container for up to 2 days.

Have you tried making veggie cheese with cashews? We don't have them here, but I know vegetarians make cheese from them and sunflower seeds too, you might experiment with that when you have some free time. There are recipes around the net.
They are magnificent. My favorite of the lot, though they are all very tasty.
DeleteI have not tried making veggie cheese, but I did have some at our local vegan restaurant not too long ago and loved it. I'm going to the make your own pizza shop sometime this month (got me some free coupons) and am going to try their veggie version. If I still like it on pizza, I'm definitely going to try my hand at making my own.
Never even knew there was such a thing. I eat cashews all the time and some almonds here and there. Be interesting to taste the flavors.
ReplyDeleteThe new flavors was a nice twist to the nuts. They can get boring on their own sometimes, but with OLOMOMO's flavor varieties, you've got a lot of options to keep things interesting.
