Ingredients:
1 & 1/2 tsps butter, softened
(1) 12oz bag of semi sweet chocolate chips
1 can (14oz) sweetened condensed milk, divided
2 tsp vanilla extract
1 cup vanilla or white chips
3 tsp peppermint extract
2 drops green food coloring
Directions:
Line a 9 inch square pan with foil. Spray the foil with cooking spray or grease with butter. Set aside.
In a heavy saucepan, melt the chocolate chips and 1 cup sweetened condensed milk over low heat. Cook and stir until smooth- about 5-6 minutes. Remove from heat. Add in vanilla. Stir until creamy- about 3-4 minutes. Spread 1/2 the mixture into the prepared pan. Refrigerate for 10 minutes, or until firm. Set remaining chocolate mixture aside.
In a heavy saucepan, heat vanilla/white chips and remaining condensed milk over low heat, stirring for 5-6 minutes until smooth.The mixture will be thick! Remove from heat. Add peppermint extract and food coloring. Stir 3-4 minutes or until creamy. Pour over firm chocolate layer, then refrigerate until firm- about 10 minutes.
Over low heat, cook reserved chocolate mixture until it reaches spreading consistency. Spread over mint layer. Cover and refrigerate overnight or until firm.
To serve- Lift foil until fudge is removed from pan. Peel away foil, then cut squares into 1 inch pieces.
Keep unused portions refrigerated.
