I married into an Irish family, and around here, St. Patrick's Day is kind of a big deal. It wasn't something I really celebrated growing up, unless you count making sure you had green on so you didn't come home all bruised up from those tiny little pinches you had to try to dodge all day at school if you made the mistake of forgetting your green. After I got married, I really embraced the holiday and just love everything about it. Trying to catch a leprechaun, clovers, green beer, and of course, the food! Throughout the year, we really love to have shepherd's pie several times a month for dinner, but like most other folks, we always have corned beef and cabbage on St. Patrick's Day. It's tradition, you know.
I tend to stick to our same old family recipes on special occasions, but I stumbled across a new recipe on Golden Blossom Honey for Sauteed Crunchy Cabbage & Apples and knew it was something I really wanted to serve this year with our traditional corned beef dinner.
The addition of apples adds a touch of sweetness, a pop of color, and gives the dish an extra boost of crunch, which I just love!
Ingredients
1 tablespoon
olive oil
1 medium onion, halved and thinly sliced
2 red skinned apples such as Macintosh, unpeeled, halved
1 small head green cabbage, cored and thinly sliced or shredded
2 tablespoons apple cider vinegar
2 tablespoon GOLDEN BLOSSOM HONEY
salt and pepper, to taste

The apples do give it a nice color (and crunch value), I agree! What's the plant? Those look like Clover leaves, but I know clovers are so tiny. Is it Shamrock?

Hahaha! It's a fake plant Rosey! They are supposed to be little shamrocks. At least I think. Just going for a little St. Patrick's Day flare in the photo :)

Deleteit ruins my tummy :( Had to take a probiotic pill yesterday because of it :( And I made something that I love to eat but never do: finely sliced cabbage fried on a bit of oil with salt and some sugar and mixed with pasta.

DeleteThat really stinks when something you just love doesn't agree with you. I have a lot of foods like that. Even those eggs that blue is talking about. They are fine when I bake them in recipes, but if I scramble them or sunny side up, nope. Sends my tummy into a fritz!

Cabbage and I had to part ways, but I was wondering... do you use a little lemon juice to keep the apple pieces from turning brown?
ReplyDeleteI didn't use lemon juice here. I diced them right before it was time to add to the pan, so the oxygen didn't have time to make them look all icky brown.
