Start Fall with an Apple Celery Salad

We've been trying to give Mariah some space as she is transitioning into her college life, so the only communication we've had with her in a month has been through text messages. Last night, she finally decided to give us a call over Facetime, so it was really nice being able to see her face and catch up for a bit. She's finally enrolled into some clubs, is looking forward to her community volunteering schedule, and is getting around to putting up decorations in her dorm room. Sounds like everything is going swell, but she did have one complaint: it's too hot there. Color me jealous, because even though it's not officially fall here, summer has definitely waved so-long and has headed for greener pastures in these parts. It's cold. It's rainy. It's definitely time to break out the jackets and fall boots. It's also time to move my summer recipes to the back of my recipe box and bring forth the fall ones. I can say that nothing beats the flavors of fall, so I'm not going to complain too much about the changing of the seasons. I did make my first fall-inspired recipe earlier this week, one I found on Golden Blossom Honey called Apple & Celery Salad

Apple Celery Salad

The apple orchards aren't open for public picking just yet, but I'm really looking forward to going when they do open for the season. I did get a deal on a bag of granny smith apples at the farmer's market, and I figured this recipe would be a great way to use them and ease myself into the deliciousness of fall. I did put my own spin on the recipe after I took the photos and added a handful of chopped walnuts because I love the earthy flavor it brings to the dish.  It has a good mix of sweet and tangy flavors and is good on its own, but it's totally up to you on if you want to leave it plain or add mix-ins to the recipe.

Ingredients
Dressing:
2 tablespoons mayonnaise
2 tablespoons Golden Blossom Honey Mustard
1 tablespoon apple cider vinegar
1 teaspoon fresh tarragon, chopped or 1/4 teaspoon dried
Salad:
4 ribs celery, cut into matchstick-like pieces
1 Granny Smith apple, cored and cut into matchstick-like pieces
1 tablespoon fresh parsley, chopped

  2. Oh, poor Mariah, I hate hot weather, we've had a few cold days, but they say we'll be going over 30*C from Sunday again :( And I was hoping for a nice, long, crisp Autumn boooohooooo......
    I do love me celery, minus the apples, plus the mayo! I couldn't really live without mayo! I eat at least 100ml of it a week :)
    I love what you did with acorns and pine-cones!

    1. Those pine cones and acorns give me such a headache every fall since they fall all over the yard and deck. They dogs always manage to sneak some in and chew them up and spit them all over my floors. Ewww! I beat them to the punch this round by scooping some up for decoration ;)

    2. they look really nice as decorations if you spray them bronze, copper or silver. In old times people used to grind acorn and make bread from that flour, and also coffee from ground, roasted acorn. It's filled with minerals, good for blood and also for haemorrhoids :)

  3. Heat can sure be blah, especially in a dorm with usually no air conditioning. Temp going up and down here. We used to have apple trees in our back yard, so picking was easy.

  5. I would love to pick apples...but we don't have any apple orchards close by. We would have to drive a few hours to get really good apples - closer to the mountains. We do have a great Farmers Market, but it would be nice to have truly fresh picked apples. My all time favorite apples are Honey Crisp - soooo good, but they are soooo expensive here!
    I love the look of that salad - looks different, but refreshing.

    1. I'm lucky that Michigan is ripe with orchards so we don't have to go too far for picking. Honey Crisp are so good, I agree!

  7. I can't wait to be able to pick some apples even though I hate that summer is gone! I remember not hearing from my daughter was so tough because we're used to seeing and talking to them every day and then....Poof... they're gone. Once they get settled she start calling again - it usually goes full circle.

  15. It's rainy and cool here in Victoria today, but not so cool that I don't have the patio door open wind. I love the sounds of the gulls calling in the autumn air. The salad sounds delicious, especially the dressing. It's a combination I haven't tried before. I appreciate the dry tarragon equivalent. I get tired of wasting fresh herbs ~ They are so expensive. I know there are ways to preserve fresh herbs, but they're one of those things that seem to get away from me. I, too, would add chopped walnuts: a pop of flavor and color and more nutrition. Sounds like Mariah is off to a good start at a huge life transition!
