Is it too early to start thinking about St. Patrick's Day? Not in the Mahoney house! We've been planning out our summer vacation this week and Jason tasked me with planning out the Ireland portion. Really, I have no idea what's up with that since his ancestry is from, ahem, Ireland! You'd think he'd be all over planning it out, but all he wants to do is see the Guinness Brewery. Typical Irishman, right? ;) So, I've been Googling away, trying to see what we need to squeeze into our 3 day itinerary (any suggestions for the lower half are most welcome!) and now my head is filled with a sea of green. Ireland isn't called the green island for nothing. All of those emerald fields are so dang mesmerizing, I have a feeling I am never going to want to leave! While I'd love to be there on St. Patrick's Day, it won't be happening this year. So, I thought we'd do a little green-ish dessert to celebrate this year. Limes were super cheap last week and we loaded up, so if you like limes, stick around. I've got a few recipes coming up that we'll be featuring them in. I put some of them to good use in this Lime Tart with Raspberry Sauce that I found on Golden Blossom Honey last week.
Okay, so it's more yellow, but add some limes on top and you've got a bit of green, so I'm calling this a dessert to help ring in St. Patrick's Day. Short of heating up the crust according to package directions, you don't have to bake this tart in the oven. The ingredients can be tossed together fairly quickly, let it set for 3 hours in the fridge, and boom. Dessert is done. Those are the kinds of desserts this girl likes!
Filling:
1/2 cup GOLDEN BLOSSOM HONEY
1/4 cup cornstarch
pinch of salt
1 1/4 cups water
10 Tablespoons lime juice
1 1/2 Tablespoons grated lime peel
4 egg yolks, beaten to blend
2 Tablespoons butter
Crust:
1 9-inch pie crust, baked according to package directions
Sauce:
1 (12 ounce) package frozen raspberries
2 Tablespoons GOLDEN BLOSSOM HONEY

I don't wanna leave this Earth before you promise me you'll either publish a cookbook with these stunning photos of yours or at least go into professional food styling. It is my goal to make you do so. If there were photo Olympics you'd score gold for sure.

DeleteShe's magnificent, but I'd call that more of an art or painting with camera then commercial photography. She's a bit over the top for my taste, but still lovely.

I really do think you should start thinking about a book. To leave something to your daughters and because I say so :)
Her photos definitely need to be in an art book. I use natural lighting. I'll put the food close to a window or if it's an overcast day without any sunlight coming through, I'll take it outside. Never use flash. I did buy a lighting kit off of Amazon a few months back since it gets dark here so early in the winter, but I only used it like twice.
DeleteMaybe if my plate is ever less full, I'll think about making a cookbook just for the girls with our favorite recipes in it. I think it would be something nice to pass down to them :)
We went to Guinness and it was pretty awesome (we ate there and though the place itself was great, the food was just meh). Tom Cruise was in town to promote a movie when we were there, and we just missed seeing him by a day. We saw him get out of his car for the promo though. People were in trees trying to see him, streets were shut down, lol I think the library at Trinity College is worth going to see. The Book of Kells is there, and the library itself is AMAZING. The Croke Park Stadium Tour is nice if your husband is big on sports. We wanted to see Dublin Castle but it was closed the day we went, so be sure to check to see things (even super popular places to visit) are not closed for some reason or other when you go. The cappuccino there is the best I've ever had and they serve it in huge cups! The people are nice. I saw you are going to Paris too. What else is on the agenda? Just curious. I love to visit Europe (even vicariously). :)

Thank you for your insight. I should have known to just send you an email to ask since you are such the world traveler! I didn't even think about checking out the library, but I will put a pin on the map to make sure we stop by. Good to know about the food at Guinness. We'll be sure to skip it since it sounds mediocre. I would have stayed far, far away from Tom Cruise and that crowd. Sounds insane. I hope he's not there when I go lol.
DeleteSo, we are doing London for 2 days, Paris for 2 days, Ireland for 3.5 days, and since our plane was already taking us to Iceland for a plane switch, we're doing a day and a half there as well. If you have anymore suggestions on these other places, do send them over. I'll be sure to have Jason check out your suggestions since he's planning out those other 3.
Every single picture I see of Iceland is amazing. I can't wait for you to go. I'm so excited for you. What a wonderful vacay! I'd love to an Italy only vacation (Milan, Florence, Pisa, Naples, Venice, The Amalfi Coast, Sicily, and maybe even a return trip to Rome)!

DeleteOh that looks amazing! One of my all time favorite desserts (after cheesecake) is Key Lime Pie! Anything limey is amazing to me! We don't have a menu planned for home - but we are having a Pot O' Luck Dinner at work, so we have a sign up sheet with all sorts of goodies. I'm bringing green punch and rainbow fruit. LOL!
ReplyDeleteI love Key Lime Pie yogurt, but I don't think I've actually ever had the pie! I need to remedy that this summer! That's cool that your work offers fun themed holiday dinners like that. I never worked for a company that gave us dinners, let alone themed ones! The green punch and rainbow fruit sounds so cute!
