Can you believe that the holidays are right around the corner? Me either! I did actually start my holiday shopping on time this year (hurray!) because you know what they say. It's always better to give than receive. I am a giver. I love to make the people I love happy. We're almost full steam ahead into gift giving season, and as you all know, I think food gifts make the best gifts. I'm always awkward when it comes to receiving, unless you're passing a plate full of goodies my way. Then bring it on! However, this year I am doing something a little different with the food I am gifting my loved ones. Instead of packaging my goodies into the standard cardboard shirt box, I will be piling my cookies and baked goods onto a Precious Moments Giving Plate.

A delicious combination that has a graham crumb bottom, fudgy center, and topped with walnuts and shredded coconut.
Yield: Roughly 20 bars
Coconut Fudge Bars
INGREDIENTS:
- 1 cup butter, divided
- 2 1/2 cups crushed graham cracker crumbs
- 1 cup sugar
- 1 5oz can evaporated milk
- 6 cups mini marshmallows
- 8 ounces semi sweet chocolate chips
- 1 cup chopped walnuts
- 1 cup shredded coconut flakes
INSTRUCTIONS:
- Line an 8x8 inch pan with foil, leaving 2 sides of the foil extended over the sides of the pan. Spray with cooking spray.
- Melt 3/4 cup of butter; mix with crumbs. Press into the bottom of prepared pan.
- Over medium heat, bring remaining butter, sugar, milk, and marshmallows to boil in a large saucepan, stirring constantly. Cook and stir for 5 minutes. Add chocolate chips and cook until completely melted and combined with marshmallow mixture. Pour over graham crust.
- Sprinkle nuts and coconut over fudge layer. Refrigerate until firm, approx. 2 hours. Cut into bars and store in an airtight container in the fridge.

ReplyDeleteI never put my gift cakes in cardboard, always in plates, even if they're cheap ones, they're more elegant. Back when I was in cake business, I'd buy up to twenty simple see-through glass plates from my Chinese shop and put my cakes on them before giving them to my customers. Even if they're plastic, it looks better.
I'd probably make a dark and white sponge, cut them in two and make four different cake rolls from them with different cream fillings, that would look amazing on the gift plate - four different roll slices :) Or like those multicakes that I keep posting on my Facebook :)
It will be hard to part with, for sure, but I think that's what makes it even more special. Keep bringing happiness to all who receive it.
DeleteI usually do the boxes because I am passing along enough goodies to feed entire families and they hold more. I think this plate will be nice for gifting to Allison's teacher or my fitness instructor. Since it's only them and their husbands, I won't load it with so much like I would for a larger family.
I think cake rolls sound really nice for gifting, though I haven't done that myself. My mom will start making her pumpkin cake rolls soon, and I always look forward to them, especially when she adds pecans to the top. I'm gonna need you to come here and make me one of those multicakes you keep sharing. Though, I feel I'm getting fat just looking at your posts :P

DeleteYummy! I don't have this plate, but I have a plate that says, "Celebrate" on it. I get it out when the kids have a birthday, or won something at school. This plate is so pretty!
ReplyDeleteIsn't that so fun to have a special plate like that to celebrate milestones? The only plate I break out for special occasions is our Cookies for Santa plate we pull out on Christmas Eve.

ReplyDeleteYears ago I was also given a red plate that was supposed to be brought out and given to a special person to celebrate...I have to admit I put it up and recently ran across it, and it has not be used for it's intended purpose...I kind of forgot about it. :(
