Healthy Eats - Muesli with Yogurt

We're almost 2 weeks into the new year. How's everyone doing with sticking to your weight loss and eating healthy goals? After a 2 month break, I've finally got back into a workout routine and I am remembering why I hate weighted squats so much. My lower body has been on fire all week, but since summer bodies are made in the winter, they are a necessary evil right now. We all know that fitness is only a small part of weight loss, since the most important part of our physical appearance starts in the kitchen. What we put into our bodies plays an even bigger role than exercise, and I've been even more conscientious about the foods I'm eating lately. I found this Muesli with Yogurt recipe on Golden Blossom Honey, and while they have it geared towards breakfast eats (it most definitely makes for a great breakfast), I've been portioning it out into smaller containers for an awesome post-workout snack.

Muesli with Yogurt

I love this recipe because it can be made the night before for a quick eat & go breakfast, or if you want to do like I do, section it into smaller air-tight containers to keep stored in the fridge to refuel after your workouts. I'll leave 2-3 days worth stocked in the fridge at a time so I only have to make this recipe twice a week but am covered for several workout snacks. If you don't do dairy, Silk has a great almond milk yogurt that is a great replacement for the dairy yogurt this recipe calls for. Keep things fresh by alternating the toppings with your favorite dried fruit and nuts each day. And if you need a little extra sweetness, maybe add a square of dark chocolate occasionally. Ingredients
1 cup old-fashioned oats, uncooked
1 cup plain yogurt, low-fat or non-fat
1/2 cup diced dried tropical fruit, or dried fruit of your choice
1/2 cup pecans, walnuts or almonds, chopped
2 tablespoons GOLDEN BLOSSOM RAW HONEY
2 teaspoons lemon juice

    We've got some new vegetarian milks called AdeZ in the shops, I think they're from Coca Cola company, I bought one with strawberry and banana, oat based, but there is also a rice, almond and soy one.
    I've also made vegetarian cornbread yesterday, and it wasn't half bad (you mix one cup of white flour with one cup of corn flour, some baking powder, one cup of mineral (sparkling) water (I think that's club soda there) and one cup of vegetable oil (I used sunflower), and then season with whatever you want - garlic, onion, vegeta, grated cheese, I've put smoked tofu. That goes into the oven at 200*C for 20 mins.

    1. Those little stars are just mango bits I cut out with my little star fondant cutter. I was going for a tropical bowl that day with the coconut, apricot and mango mixed in.

      I admit, my cornbread muffins usually come out of a box. The mix they sell at the restaurants is sold at our warehouse club now and it's Jason's favorite, so I rarely make my own these days. Yours does sound really good and quite simple to make.

  2. That is one of my favorite ways to start the day. I usually use granola, but I recently got on a muesli kick, so I can't wait to try this!

  4. Squats sure can be a pain in the butt, literally. Starts in the kitchen in many a case too, or helps out, if one wants to stay in shape.

  6. This is right up my alley. I like the little mango stars. I haven't done one squat this year and I have no regrets (beach body, smeech body). ;)

  9. Looks really delicious! I love make ahead breakfasts. It would give me some assurance that my kids are eating healthy even if we all have to have breakfast in the rush.

  11. I love to work out by doing barre classes or on the treadmill. I usually add lifting weights to my routine. Love this idea for a breakfast you can make the night before
