For a simple, yet scrumptious weeknight meal, Slow Cooker Crack Chicken is a good recipe to keep on hand. The kids like it when I put the chicken mixture onto slider buns served with a side of fries. This recipe is Keto friendly, so my husband opts to skip the bun and just pile the shredded goodness on his plate and eat it as is.

I love to use Hidden Valley Ranch Seasoning Shaker with my Cauliflower Chickpea Ranch Tacos. These vegetarian tacos are another fast and easy weeknight meal solution, and a healthy alternative to traditional meat filled tacos.

Yield: Serves 4

Cauliflower Chickpea Ranch Taco

Cauliflower Chickpea Ranch Taco

INGREDIENTS:

  • 1 large head cauliflower, cut into bite sized florets
  • 1 can chickpeas, drained and rinsed
  • 1 pint grape tomatoes, halved
  • 4 large soft shelled tortillas
  • baby spinach, rinsed and dried
  • Hidden Valley Ranch Seasoning Shaker
  • Oil for spritzing

INSTRUCTIONS:

  1. Preheat the oven to 400 degrees F. Place cauliflower florets on a cookie sheet and spritz with oil (I use avocado oil, but olive and vegetable oil work fine too). Roast for 25 minutes, turning halfway through baking. Remove once cauliflower starts showing signs of browning.
  2. While cauliflower is baking, heat the chickpeas in a small pan until warmed through. Remove from heat.
  3. Warm tortillas according to package directions. Start layering the ingredients onto the tortilla. I start with the baby spinach, followed by the chickpeas, cauliflower, then grape tomato halves. Give a few shakes of the Hidden Valley Ranch Seasoning Shaker over the tops of the taco mixture, fold the tortilla in half, then immediately eat.

  1. I've heard about Ranch but never knew what is it made of? The packaging is lovely indeed! And you did lovely photos and recipes too!
    Last time I made some broccoli I put in it some baking soda while cooking like Gloria Dear told us and it did work, my stomach did not hurt after, but I'm still afraid of cauliflower :(

    1. If you like dill, you'd like ranch. I'll have to send you some in my next care package.
      I am glad you were able to enjoy your broccoli. I've been using it in my lentils also and not having bloating and cramping afterwards either. You'll have to let me know if you try it with cauliflower. I can eat that just fine, but I feel horrible you can't enjoy it without getting an upset stomach :(

    2. I do love me dill, I always have some dry dill in my cupboard, I usually use it with zucchini! I guess that ranch is like a salad spice, then, they usually put dill in salad seasonings.
      I'm trying baby carrots for the first time in my life tomorrow :) We've never had them before, I found them frozen in Lidl last week. I've also discovered that you have Lidl in USA too.

    3. Dill is one of my favorites too. I haven't had it on my zucchini, but I do mix it into my potatoes often.

      How were those baby carrots? We use them often for party snacks, usually served with a dill dip.

      I've heard of Lidl, but sadly there aren't any near where I live :(

  2. I'd love the cauliflower tacos. The rest of my family would roll their eyes at me. I made pizza crust with cauliflower before, and didn't hear the end of it. LOL They look great to me!

    1. I've seen the pizza crust made with cauliflower and just couldn't wrap my head around it. Some people love it though, I just haven't been brave enough to try it myself.

  5. I love the shakers and this recipe!!! I have not seen the Hidden Valley Ranch shakers at my grocery store, but will definitely keep an eye out for it! I can think of a few dishes that a tasty sprinkling of HVRanch would taste awesome!
    Going to try these tacos. They look delish! ;)

    1. Our Walmart didn't have the shakers, but if you have a Meijer, look there. Not all stores carry it just yet, but I am sure they will soon enough :)

  8. I have not heard of this version yet but I love the idea of shaking on some seasoning for a boost of flavor. I can think of lots of recipes that this would go well with.
