I shared a refreshing drink that you could use for Cinco de Mayo festivities last week, but today I wanted to share a yummy appetizer that's great for your celebrations too. Yeah, tacos are usually the star of the show, but we're nibblers here, so having an assortment of finger foods on hand while my sister-in-law is frying up the tacos is a must to keep everyone happy until the main course is served. I'm a big burrito lover, so I knew that if I made these Seasoned Black Bean Roll-Ups from Golden Blossom Honey, at least one person was going to be happy (me!)
Of course, I know that everyone in my family is going to love these bite-sized burritos, but what makes me especially happy about them is that they are perfect for vegetarians. I like having a wide variety of meat and meat-free dishes on hand when hosting parties so there's something for everyone on the menu. Seasoned Black Bean Roll-Ups are great with a variety of dipping sauces too. Set out a few bowls and fill with salsa, yogurt or sour cream, and guacamole so your guests can choose what dipping option they like best. Serve these nibblers this weekend and watch how quickly they disappear off the plate. You might want to make a double batch because they're gone almost instantly here!
1 Tablespoon canola oil
3/4 cup onion, chopped
2 medium cloves garlic, minced
1/2 teaspoon jalapeno pepper, seeded and finely minced
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1 (19 ounce) can black beans, drained and rinsed
1 Tablespoon water
1 Tablespoon, plus 1teaspoon red wine vinegar
1 Tablespoon tomato paste
1/2 teaspoon GOLDEN BLOSSOM HONEY
salt pepper to taste
8 8-inch flour tortillas
salsa
yogurt or sour cream (optional)
