We're finally getting our first warm days of the year and that means it's officially grilling season! Next weekend many of the grills in the U.S. will be fired up for Memorial Day. I'll be hosting my first cookout of the season then, which will also double as a going away party for my favorite foreign exchange student from Sweden. In addition to sending him off with his last taste of American burgers, I wanted to add in chicken for a lighter option for those who are dieting (seems like everyone here is still scrambling to get their summer bodies in shape!) I can't think of a better recipe to add into the mix than this Chicken Skewer with Pineapple and Red Peppers found on Golden Blossom Honey.
These skewers have a sweet and tangy combination because of the Asian inspired marinade combined with the sweetness of the honey, pineapple and red pepper. This recipe is a great addition to your barbecue lineup since it's on the lighter side of the menu but packs a huge punch of flavor. And while that's all well and good, honestly I'm all about eating food off a stick. Who doesn't love plucking food off of a skewer? It's the unofficial utensil of summer, right!?
Ingredients
1 pound boneless chicken breast halves, each cut lengthwise into 4 strips2 tablespoons dry sherry
2 tablespoons soy sauce
2 tablespoons GOLDEN BLOSSOM HONEY
1 large clove garlic, minced
1 tablespoon sesame oil
1 teaspoon fresh ginger, minced
1 red bell pepper, cut into 16 (1/2-inch) chunks
16 (1-inch) fresh pineapple chunks
8 (6-inch) skewers, soaked in water 30 minutes

Da Swede is finally going home? Talking about Sweden, their representative at this year's Eurosong which is currently on in Tel Aviv, is one of my faves!
ReplyDeleteHe'll be graduating on the 9th and will be going home shortly afterwards since his foreign exchange student program will be up then. I'm sure he'll be back though to visit his girlfriend (and she's going to see him this summer) so we haven't seen the last of him, I'm sure.

Sure sounds and looks like a great way to go for chicken. Seems the cold left everyone with a little extra laze this year as far as diets and such go.

DeleteWe always have may birthday celebrations that day. Isaak, my nephews Elijah and Edison all have birthdays in May.
