As a mom, one of my favorite gifts to get on Mother's Day is food. More specifically, food that I didn't have to make myself! My girls usually serve me breakfast in bed, which is always a welcomed treat. I won't see my mom or mother-in-law until well after breakfast is over, but that doesn't mean that I can't also give them a tempting treat for their special day. Just like me, my moms have a sweet tooth like you wouldn't believe, so I thought giving them a homemade dessert in addition to their gifts would be a nice touch this year. I was thinking that muffins would be the way to go, but quickly changed my mind when I found this Cream Cheese Coffee Cake recipe on Golden Blossom Honey.
This coffee cake could very well be served as breakfast, but it's also perfect for afternoon tea or dessert. Like a lot of the recipes that I've pulled off of Golden Blossom Honey's website, this one can be customized to your own specific tastes. If you (or mom) don't like raspberry, swap out the jam for strawberry or blueberry. I actually love raspberry flavor and think it's divine in this recipe, but if you just aren't feeling it, by all means go with the flavor you love. While this recipe may look complicated due to the large ingredient list and layering steps, mine was done from start to finish in just a little over an hour (minus cooling time). You don't have to go all out on an expensive gift for mom. Bake her up this coffee cake for Mother's Day for a surefire gift she's going to love.
Ingredients
Cake: 2 1/2 cups flour
3/4 cup sugar
3/4 cup butter, softened
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
8 ounces sour cream
1 egg, beaten
1 teaspoon almond extract
Raspberry Filling:
8 ounces cream cheese, softened
1/4 cup GOLDEN BLOSSOM HONEY
1 egg
1 cup raspberry jam
Crumb Topping:
1/2 cup sliced almonds

We have them, but they are still awfully expensive. Hopefully they will come down in price by June.
