Who's ready for the 3 day weekend? Memorial Day is the kickoff to BBQ season, and I am definitely ready to fire the grill up and do some entertaining. While the grill sees the most action this time of year, I believe the sides dishes also play an important role in rounding out a good BBQ cookout. Last week, I shared some yummy chicken skewers, but today I want to sweeten things up a bit and encourage you to check out this Ambrosia recipe from Golden Blossom Honey.
My sister-in-law makes something similar around Christmas, but she mixes in whipped topping and cherries (which you can totally do here too!) But for those who want something with a little less sugar or can't tolerate dairy, this is an exceptional substitute. I love the medley of tropical flavors here because the whole recipe just screams summer to me. And after that long winter, who doesn't need a bit more summertime reminders in their life? If you want to be a little extra, add in a small handful of chopped nuts to give it a bit more texture. I like walnuts, but pecans would be amazing here too. Or, just leave the recipe as is and it's still going to be a hit with your guests. It's all about doing what works for you!
Ingredients
2 apples, washed, cored, and cut into small pieces2 cups green grapes, washed and cut into pieces
1 large ripe banana, peeled and sliced
2 kiwis, peeled and cut into pieces
2 navel oranges, peeled, cut into sections
1 small ripe pineapple, peeled, cored, cut into small chunks, juice reserved
juice of 2 limes
3/4 cup GOLDEN BLOSSOM HONEY
1/2 cup water
juice of 2 lemons
1/2 cup coconut flakes

Sure looks like a win and with BBQs going strong, side dishes usually get welcomed after a few times. Always good to avoid the dairy at my sea too. Hopefully you have a good long weekend.
