I come from a long line of southern women, and if you know anything about a southern woman, then you know they love to cook up hearty comfort foods. This is the time of the year that I really start to think about the women who have shaped my life- my grandmas, my mom, my mother-in-law and my stepmom, and how they are/were mighty fine cooks. I don't think that many would disagree that nothing beats a good home cooked meal, and I rarely skipped out on dinner growing up around some of the most amazing ladies who sure knew their way around a kitchen. Of course, they all had their own signature dish, but the one comfort meal that they all served up time and time again was beef and noodles. It was a meal that you would never catch me saying no to, and my stepmom was especially fond of making it for me anytime I requested it for dinner. She's been gone for a few years now, but as the cooler weather approaches, I think about her most. She loved fall and had a passion for Halloween that would rival my own. After checking out the new Halloween displays and thinking about how much my Lisa would have giggled over the new offerings at the store last week, I decided to buy some egg noodles, then came home and made this Braised Beef Over Noodles recipe from Golden Blossom Honey in her honor.
This is a really easy, yet comforting recipe for cooler weather. You can make it vegetarian by omitting the beef, cook the sauce per recipe instructions (swap out the beef broth for vegetable broth), then towards the end of the cook time, saute some sliced mini Bella mushrooms and stir into the sauce before serving. The only thing I would do different on this recipe is add in mashed potatoes. All of the women in my family usually plop a scoop of mashed potatoes onto the plate first, cover with another scoop of noodles, then top with the sauce. It's totally up to you, but that's just how we roll in this family.
Ingredients
1 tablespoon olive oil1 1/2 pounds lean beef stew meat cut into 1-inch cubes
1 tablespoon flour
1 cup onions, coarsely chopped
1 large garlic clove, minced
1 1/2 cups water
1 cup dry red wine
1 cup low sodium beef broth
2 tablespoons GOLDEN BLOSSOM HONEY
1 tablespoon Worcestershire sauce
3/4 cup (about 2 ounces) sundried tomatoes halves, not oil packed, cut into strips
2 teaspoons fresh rosemary, coarsely chopped
1 bay leaf
salt and pepper to taste

ReplyDeleteSadly, none of the ladies in my family knew how to cook, grannies never, mother used to give me tummy ache all the time with her cooking. My part of the country does like to cook hearty food as it is a farming region, so we cooked everything of pig's fat which turned me into a pig myself in teen years LOL The only ingredients they use here is flour, eggs, fat, potatoes and onions.
Don't get me wrong, southern women love to cook in bacon grease too. It's a sin to throw it out in the south! It's amazing how many delicious foods you can make with just those few simple ingredients- flour, eggs, fat, potatoes and onions.

ReplyDeleteThis dish seems similar to stew but put over pasta instead. I've never heard of it, but it does sound different. My cousin recently moved to the south (NC). I will share this with her because she's trying to fit in! I still giggle when I hear her say "Sweet tea and Jesus" in her Long Island accent. lol

Yum, this looks like a delicious meal. I come from a family who aren't the best cooks. I wish! I think I could manage to put this together without burning it though.

DeleteMy grandma made beef and noodles and it was a family staple for Sunday dinners (which we all had at her house). I remember her letting me help knead the dough and roll the noodles out. When I got older she's let me help cut and spread them out to dry. Some of my fondest memories of my gram are in her kitchen. Thanks for the memories, and the great sounding and looking recipe.
