I know there are some who prefer their cookies to be crisp, but I am one who LOVES a soft baked cookie. I prefer a chewy, cake-like cookie so this recipe was one that I could really sink my teeth into. The pumpkin helps to bake it up soft, the raisins and walnuts add a nice texture,and the spices add a hint of warmth, making this one awesome seasonal cookie!
Ingredients
1 1/4 cups GOLDEN BLOSSOM HONEY1/2 cup shortening
2 eggs
1 1/2 cups solid pack pumpkin
2 1/2 cups flour
4 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups raisins
1 1/2 cups walnuts, chopped

DeleteLooks quite delightful, deary, I expect tons of such festive treats here during the Halloween month :) I currently cannot bake anything as our oven broke so we bought a new one but it arrived with one of the heaters not working, so I'm currently waiting for a delivery guy to come and take it back to the repair service :( It stressed me out massively this week, and you know in which way you and I react to stress :(
ReplyDeleteOh, no! I hope you are finding ways to stay calm in such a stressful situation. I know I would be massively stressed at that kind of ordeal. Bad enough that yours broke, but to have a new one arrive defective? That would send me over the edge.
DeleteI'm still staying away from the sugar, so I haven't made my normal amount of Halloween goodies, but I'll be attending a party tomorrow (the host is a baker) so if she has some fabulous treats on display, I'll be sure to share them over on Facebook for you :)

DeleteThe delivery guy took the oven away today, hope we won't wait for weeks to get it back repaired.
Getting better, but still have a long way to go. I will eat stuff sweetened with honey or maple syrup, but try to avoid refined sugars. I did cheat over the weekend and had a few gummy worms at the Halloween party, but thankfully that didn't do much damage.

It cannot be fixed, they are sending us a new one, hope that one won't be broken too! I'm about to die from stress of it all!

DeleteYummy! I love pumpkin anything. I'd prob. replace the raisins with chocolate chips. I'm a chocolate crazy person.
ReplyDeleteI think a chocolate substitute sounds wonderful! I know some people don't like raisins in their cookies, so that would be a great swap out for them. I personally love them, but will have to shake things up a bit next time and use chocolate chips to see which one I like better in this recipe.
