When it's rainy and chilly outside, nothing is more satisfying than a huge bowl of stew and warm crusty bread fresh from the oven. I'll add in a cozy blanket and a good book if I'm eating it for lunch and don't have plans for the rest of the day since I may indulge in a little nap afterwards. I think that's one of the best things about fall. You're allowed a little leeway into eating comfort foods a bit more and it's okay to be more lazy with your free time. Earlier this week when it was extra nippy out, I was craving some soup, but all I had on hand were cream based varieties that just didn't sound appealing. So, I figured it would be a perfect time to try out this White Bean & Fresh Tomato Stew recipe from Golden Blossom Honey.
The stew is so comforting and will warm your bones quite nicely on a chilly day. This is a fantastic vegetarian recipe, but if you want to make it a little more hearty for meat lovers, toss some cooked crumbled Italian sausage into the mix. That's what I do for Jason's portion. If you're short on time, no worries because this stew is done in under 20 minutes. I think next time I'll make a double batch for an even faster lunch or dinner option so I can just heat and eat.
Ingredients
2 1/2 - 3 pounds plum tomatoes, chopped2 tablespoons olive oil
1 clove garlic, minced
2 tablespoons GOLDEN BLOSSOM HONEY
1/2 cup fresh basil, cut into slivers, reserving 1 tablespoon for garnish
1 teaspoon salt
1/4 teaspoon ground pepper
1 (15 ounce) can Great Northern white beans, rinsed and drained
8 ounces fresh mozzarella cheese cut into 1/2-inch cubes*
1/2 cup Parmesan cheese, grated

What variety of beans are your favorite to use in soups and stews?
That marble gray dish is cute, I have a similar one but darker! And that bread looks lovely, I adore me pastries! I made risotto with broccoli, carrots, peas, parsley and onions for today and millet with red lentils as usual for tomorrow :)

DeleteNo, we have the stove, but we don't use its oven as it works on gas, we have smaller electric stove for baking and that one is broken and we still haven't got another after the new one was taken and proclaimed unrepairable :( We've been without an oven for a month now. I mostly boil everything so it is not such a problem for me, but my mother is going crazy.

ReplyDeleteI like Chili (Isaak's been a little pickier about that), Chicken and Dumpling Soup, a Southwestern Squash Soup, and I like Split Pea Soup (doesn't always look the best, but it tastes good).
I have never had split pea soup but I love peas so I bet I'd like the soup. We eat a lot of chili this time of the year too. Actually, we just had a pot of it on Thursday night :)
