Did we eat a little too much during the holidays? Are we ready to kick start our New Year's resolution to eat healthier yet? If you ask me, it's a great big YES to both flying out of my mouth. Not that I've been eating terrible food, but there is always room for improvement. You don't need to wait until the first of the year to make positive changes. We usually stuff ourselves with greasy pizza and sugary snacks on New Year's Eve, but this year is going to be different. My family loves tacos, but instead of the normal ground beef we fill them with, I am opting for a healthier, protein and fiber rich version instead. These Bean and Cheese Tacos from Golden Blossom Honey are easy, filling, and are so flavorful, you won't feel like you're missing out by making the swap.
These tacos would be perfect for your New Year's Eve party. Set up a taco bar and let everyone choose what toppings they'd like to add to their own plates. Salsa, avocado, black olives, and diced tomatoes are all healthy and delicious options. You could skip the fatty sour cream and add a dollop of Greek yogurt to keep things on the lighter side. I used soft shelled tortillas, but if you prefer hard shell, by all means, use those! You could even make the filling recipe as is, then sprinkle them over a tortilla chip lined baking sheet, toss the cheese on top, then bake in a 350 degree oven until cheese is melted for a bean and cheese nachos dish. Yum!
Ingredients
1 tablespoon olive oil
1 cup onion, chopped
1 red bell pepper, diced
1 tablespoon chili powder
2 teaspoons dried oregano
1 teaspoon ground cumin
1 clove garlic, minced
1 cup canned pinto beans, rinsed and drained
1 cup canned garbanzo beans, rinsed and drained
1 (8 ounce) can tomato sauce
2 tablespoons GOLDEN BLOSSOM HONEY
1 tablespoon red wine vinegar
8 - 12 taco shells
Toppings:
1 cup shredded iceberg lettuce
1/2 cup cheddar cheese, shredded
1 cup salsa
1 avocado, peeled and chopped

DeletePizza is actually one of the healthiest foods as it contains all a body needs daily :) carbs, dairy, vitamins, minerals, fibre... If you don't stuff it with sausages of course :)
ReplyDeleteI've been very hungry this week, as because of the holidays I bought bread at some other baker and it did not fill me nicely this week, methinks.
How were your holidays?
The pizza we eat would not be considered healthy. It's greasy and packed with too many calories LOL. Though, I usually just put black olives and mushrooms on mine, so it's probably not that horrible.
DeleteCan you not whip up some filling bread for yourself? I've been thinking about making a bread braid or something this week, but then I'm torn between baking and getting my house back in order.
Holidays were lovely, dear but I am so glad they are over. I am exhausted and need to catch up on rest. How were yours?
I don't have time to boil a soup let alone bake a bread LOL I haven't cooked anything that takes more than half an hour in years :) I only have time to cook three days a week, and that only when I wake up at 7am to do it before work and other stuff.
DeleteSo glad to hear your holidays were nice. I'm guessing you were at the inlaws? Did the gurls bring your future sons in law with them? :) I worked all day long and then watched Klaus in the evening and fell asleep in the middle of it :)
We did just a little time at the in-laws. I don't think we were there for more than an hour this year. I was just tired and wanted to be at home. Mariah did take Kyle to the in-laws. The Spaniard came over Sunday for family Christmas breakfast though.

ReplyDeleteMy Mom sent us home two things of soup. There wasn't enough Chili, for 4 meals (dinner for all 4, and lunch for all 4), so I made loaded chili nachos. It ended up being pretty good!
This looks delicious and is such a great idea for NYE food! I was thinking about an ice cream bar, but that clearly goes against the theme of being healthier after the holidays. :)

ReplyDeleteYum. These sound amazing but I’ve been afraid to try chick peas. I don’t eat a ton of them but when I do I prefer black beans. Maybe I’ll swap out the garbanzo beans for black. I’ve got a ton of them in the pantry.

ReplyDeleteI went on tilt at the grocery store on New Year's Eve day buying all these things for us to enjoy later in the evening. We're still eating some things. I wish I had this recipe and made these tacos instead! That's what I get for falling behind yet again. I hope that you had a great New Year's Eve.
