Shrimp Salad Sandwich

Thanks to the virus, I haven't been to the grocery store in over a month.  Jason had to take over shopping duties for the household, and truth be told, I can't wait to fire him from his position. Not that he's overly terrible, but I do have to worry that he's buying the right things from my list when I send him out. Like last week I specifically wrote out, "I need a bunch of fresh dill from Fresh Thyme (the store). What did I get? A thyme plant and no dill. It's like potluck surprise when he comes back from the store LOL! Thankfully, I did have some dried dill in the cabinet for this week's Golden Blossom Honey recipe, so no harm done. Because I'm trying to keep everyone safe and limit outings, I've been making extra food at dinnertime so Jason doesn't have to venture out for lunch at work. But, sometimes there just isn't enough leftover for a decent lunch the next day, and that's where this Shrimp Salad Sandwich fills a need perfectly. 


This sandwich spread is quick to toss together and can keep for several days in the refrigerator in an airtight container. I always have a bag of tiny salad shrimp in the freezer, which is quick to thaw, so it works beautifully in this recipe without having to chop up a bunch of larger shrimp. This is great for lunch and dinner at home, but if you're taking it to school or work to consume later in the day, place the spread into a container, then assemble the sandwich when you're ready to eat to prevent the bread from getting soggy in your lunch bag. 

Ingredients
1/2 cup mayonnaise, regular or lite
2 tablespoons GOLDEN BLOSSOM HONEY MUSTARD
4 teaspoons fresh lemon juice
4 teaspoons Dijon mustard
1/4 cup fresh dill, finely chopped
1 pound cooked shrimp, shelled and de veined
2 hard boiled eggs, peeled and chopped
8 slices rye or pumpernickel bread
sliced tomatoes, optional
sliced avocados, optional
lettuce leaves, optional

I cannot imagine somebody else shopping for me, I'm ever so particular and picky while shopping, they'd probably bring me overly ripe tomatoes, mushy lemons, sour apples, rotten potatoes etc. I'd rather starve. On the other hand I'm a great shopper for others, I'd bring you great stuff you did not even know existed. I've never had shrimps in my life, it is a food for millionaires here, methinks.
    What is pumpernickel?

    1. I'm the same when it comes to produce. I hate it when I have to have someone else buy it for me because I'm so particular about what I want. But, during these times, beggers can't be choosers so I'll take what I can get.
      Shrimp is also a bit pricey here, but sometimes our stores will have good sales and I'll buy a few bags for the freezer. Jason and Allison like scampi for a quick meal or will toss some in their pasta every now and again.
      In my opinion, pumpernickel is not tasty. It has a weird spice flavor to it that I just don't care for. I much prefer rye (or even sourdough) but again, it's all our stores had on hand. I wasn't going to finish the loaf, but left it on the counter for someone else to eat. That someone happened to be one of my dogs. She's been a real heathen lately and decided to break the biggest rule of staying off the counters yesterday and ate the entire loaf!

    2. Do you miss shopping itself? I don't go out often, just two times a week, once downtown and once to the local grocer and bakery with a mask on. We will be locked up under full 24h curfew even next two or three weekends as Mayday is a major holiday here (I expect they will close us into our houses from next Thursday and keep us in till Monday).

      Speaking of pets, Snezhana has kittens, she gave birth to them on Monday night. She keeps them somewhere hidden.

  2. Lol, I'm glad I don't have to send my husband to the store. There would be lots of extras, like Oreos and HoHos.

    1. Jason went to the west coast back in January a day earlier than Allison and I to get our RV all set up and buy groceries for the week. Wanna talk extras? He bought 78 granola bars at Costco for the 3 of us going on a week long trip. We ate probably 10 total. My hubby is the king of extras LOL!

  3. I've never had shrimp salad, but this looks tasty. As far as shopping, we've been doing instacart, but I create the order. So the right things get bought! LOL

    1. I've been thinking about doing Instacart, I've just been worried they wouldn't pick the best produce if I went that route. I guess I should bite the bullet and give it a try and see though.

  4. Yum!! I like the shrimp salad with lemon and oil instead of mayonnaise, but this sounds yummy too. My husband has been doing the grocery shopping too and he gets mad at my explicit lists. Last week I wrote "frozen vegetables, but for the love of God, no more peas". He was so insulted he told my mom on me. hahaha

    1. I love seeing all the husbands stepping up to the plate and taking over grocery duties, even if some of them can't get it done all the way correctly. Dezzy shared a Daily Mail article on my Facebook that says Japanese husbands prefer to do the shopping because their wives take too long LOL

  8. My husband does the shopping now but he does it all online. It's a silver lining out of this current situation. On another note, the recipe looks delicious! I'm a huge fan of seafood.

    1. Thank goodness for modern technology where we do have these options to shop online. I can't imagine this pandemic hitting even 20 years ago how we all would have been scrambling to get the things we need.
