The weather is warming up and berry season is just about upon us. For me, that means it's about time to enjoy all kinds of fruity desserts and I can hardly wait! To celebrate the start of spring, Entenmann's® is putting a fresh twist on a classic dessert favorite, pound cake with berries! From grilled to a la mode, fans can create easy, fun, and delicious pound cake recipe combos using Entenmann's Mini Pound Cake.
This time of year, I am all about strawberry shortcake. My mom always made it with angel food cake, but I decided to take her recipe and recreate my own version by using Entenmann's Mini Pound Cake in a Strawberry Shortcake for 1 recipe.
When you have a few strawberries leftover in the fridge, individual strawberry shortcake is the best way to use them up. All you need is 5 ingredients for a scrumptious seasonal dessert that can be whipped up in minutes.
Yield: Serves 1
Individual Strawberry Shortcake
INGREDIENTS:
- 6 medium ripe strawberries
- 1/4 cup milk
- 1/2 tablespoon sugar
- 1 Entenmann's® Mini Pound Cake
- whipped topping
INSTRUCTIONS:
- Wash and slice the tops off of the strawberries. Pat dry.
- Slice berries into quarters, then using a fork or pastry cutter, mash the berries into a slightly chunky consistency.
- Pour half the milk over the mashed berries and stir. If the consistency is to your liking, discard the rest of the milk. If not, continue stirring in the remainder of the milk until you reach your desired sauce consistency.
- Stir sugar into berry mix.
- Place Entenmann's Mini Pound Cake on plate. Pour berry sauce over pound cake. Top with whipped topping.
- Eat and enjoy!

This idea really appeals to me, especially because it is so easy and convenient. I've made this type of dessert with pound cake before, but then I usually have too much pound cake left over. With these individually wrapped pound cakes, I can have just the right amount. Love the idea ! thanks
ReplyDeleteI agree that the individual pound cakes are so handy here. I've had my angel food cake mold before using it all up before, so these are quite practical for the budget too!
DeleteThat's a great idea for using the mini pound cakes. I don't think I've ever seen those here. The two grocery stores I go to do not have anything besides Entenmann's donuts.

DeleteWe have them in green markets for a month or two now, I just haven't been in the mood yet. But my raspberries are blooming currently, seems like I might have the average pick this year again. I did put a few wires in front of them so that they can climb on it and wrap around it. Now it all depends on the flimsy character of Mother Nature.
DeleteOne of my blueberry bushes didn't live through winter, so I am super sad about that right now. The other one is thriving though, so that lessens the blow a little, but not much. I do think the goji berry plants I planted a few years back are actually going to fruit this year, and that's exciting to me. Probably because we won't be living her next year, so at least I'll see one season's worth of berries on them.Too bad you aren't getting more raspberries this year. Mother Nature was a real best this winter. My lilac bushes didn't even bloom this spring. They went straight to leave and that's it :(

While I don't like strawberries, my grandmother's favorite dessert is strawberry short cake. Maybe we will make this for her and do a drop off on her birthday in a few weeks.
