Anyone else still on the "let me see what I can make with what I already have in my kitchen" meal plan because they just don't want to make the trek to the store ever since Covid-19 hit? We've been having some interesting dinners here lately, that's for sure. I decided to dig deep into the freezer to see what we had buried down there and pulled out a stash of chicken thighs and legs. Funny thing is, I don't know why I even bought them in the first place because dark meat usually isn't something that my family is very fond of. But, here we were with a bag full of chicken that I needed to figure out what to do with and a few hungry mouths to fill. I knew I needed to find a simple recipe with ingredients that I already had on hand. Thankfully, Golden Blossom Honey never disappoints because I found this super simple Orange Glaze for Grilled Chicken recipe that allowed me to work some magic on an otherwise boring dinner.
I'll be the first to admit that I have no idea what I'm going when it comes to grilling anything other than chicken breast, but I surprised myself when I was able to pull off this meal without a lot of effort. The glaze did all of the work, caramelizing as it cooked, leaving a sweet and tangy coating on the chicken that both Jason and Allison went for seconds on. Three simple pantry staples is all you need to take a meal from eh to wow.

1/4 cup orange marmalade
1 tablespoon soy sauce

Digging through a freezer can be a really interesting adventure indeed. We have a standing one now, but before we had the box one and you really cannot get to the bottom of it after you packed it up with meat and veggies in Autumn, so sometimes my mother used to find a bag of strozzberries from a year ago on the bottom of it, or sliced cucumbers for salad. The worst is when a bag breaks and everything starts to smell like, lets say, peppers in it :) and there is no way you will take everything out to clean it up till next summer when it is emptier :)
ReplyDeleteI agree. I often find things buried in the bottom of the freezer that I long forgot about. It really does make for interesting meals when you need to use them up. Thankfully, I haven't had anything break in there so it hasn't smelled terrible *knock on wood*.

DeleteI make similar glazes like that for salmon. It's very good. I'm back to grocery shopping once or twice a week, so haven't had to get too creative.
ReplyDeleteI always have to have a sweet glaze for salmon. I have never liked seafood, but will try a small portion of salmon once or twice a year but it really has to be smothered in something sweet for me to choke it down.

DeleteThis sounds DELICIOUS!! We eat lots of grilled chicken around here. We prefer chicken thighs, but will opt for the occasional drum stick when we're feeling daring. :)
ReplyDeleteWe were always a white meat family, but my step mom loved her some thighs and always made them since she was the cook. It took me a really long time to learn to like them though.
