We may have missed strawberry picking season, but Allison and I did make it out to the blueberry fields recently and loaded up on 6 pounds of organic blueberries. I'm going to give a shout out to Blueberry Ranch in Indiana. It's the only organic blueberry farm in Northern Indiana and hands down, they have THE BEST blueberries around. There's only 2 more weeks in the picking season, and I really hope we're able to make it back out to snap up some more before they close up shop for the remainder of the year. Anyhow, I've been making some amazing baked goods with our haul, one being some pretty tasty scones (thanks for the recipe Bijoux!) and also this scrumptious Blueberry-Lemon Upside Down Cake from Golden Blossom Honey.
I think blueberry and lemon has to be one of my favorite fruit combinations in baked goods, so it was no surprise that gravitated towards making this cake this week. I did end up using Silver Blossom Honey to give it an extra citrus flavor kick, and have to say it was a great choice for this recipe. If you're headed out to the blueberry fields this summer, make sure you save this recipe to reward yourself with after all of that hard picking work!
Ingredients
Topping: 6 tablespoons butter
1/2 cup golden brown sugar
2 cups fresh blueberries
Cake:
1 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon grated lemon zest
1/4 cup milk
2 eggs
1/2 cup SILVER BLOSSOM HONEY
2 tablespoons fresh lemon juice
1/4 teaspoon almond extract
6 tablespoons butter, melted

DeleteThat is so pretty, deary, one could easily stare at that photo for hours without blinking. The packed blueberries that we can sometimes find in our supermarkets, highly overpriced, are usually tasteless, so I don't think I've ever tried real, juicy blueberries full of flavour! It is currently the season of melons, peaches and nectarines here, apples are currently wildly expensive, about 2 dollar a kilo which is insane. The food has become four or five times more expensive in the last eight years of the villain's dictatorship, and it is getting crazier and crazier. I remember that back during the old government lemons were like 40cents per kilo, now they can go up to 4 dollar per kilo, oranges never go bellow 2 dollar per kilo and now it is the same with apples even though we produce those ourselves massively in our country. Even the melons are around a dollar now, and they use to drop to 30 cents per kilo back in the days. The salaries, of course, did not rise the same way... We shall soon all be starving, especially from Autumn when prices usually rise and when tons of people will be left without jobs and many business are expected to close.
ReplyDeleteCan you not find a blueberry bush to plant in your yard along with your raspberry bush? My blueberry bush was really pathetic this year and my blackberries were gobbled up by the bunnies before I had a chance to harvest them. Both bushes are fairly young though, so I expect the people that buy this house will enjoy the fruits of my labor more than I get to now.
DeleteYou really get ripped off on fruit. Those prices are outrageous. How the hell do they expect you to eat healthy with those prices? Our apples are a bit expensive right now, but they'll drastically drop by September when they are in picking season. Maybe it's time for your countrymen to band together and have community farms/gardens where you share in the work and are able to take home the produce instead of having the profits go back to such a corrupt government.
I think you can dig out your bushes and carry them with you to a new place :) I'd like a blueberry bush, but they won't allow me any space in the yard, they'd probably cut it down the very first week as they do with everything else I try to plant.

Our government even allows export of veggies from abroad, tomatoes for example, and very bad ones, from the green houses, and since they are very cheap our own farmers have to throw their tomatoes away as they cannot sell them for such cheap prices. We eat rubbish, our farmers are destroyed, and our government is rich and happy like true mobsters.
That's horrible that you can't have your own damn blueberry bush! Maybe offer to split the spoils with them and see how that goes?

I think that's sad that your government doesn't allow your farmers the decency to provide inexpensive produce to its citizens. The fat cats keep getting fatter and the little guy always suffers :(

DeleteThese pictures are your prettiest yet. They belong in a cook book! I've never gone blueberry picking, but maybe I should since they're my son and I's favorite fruit. We get the giant container from Costco for $8 and end up fighting over the berries on day # 3. lol!
