To all you parents out there struggling with e-learning, my heart goes out to you. I've seen you all trying to wade through this mess and I don't know how you do it. I'd be a hot mess if Covid hit before my girls were old enough to manage online learning on their own. I did worry for a minute about Allison rearranging her sleep schedule since becoming a night owl in March. But, she's surprised me by getting up earlier than I do, brewing a pot of coffee and making a light breakfast before logging onto her Zoom meetings for the day. I did stock the the pantry with easy to grab breakfasts, like muffins and bagels, which are fine on their own, but why not add a little sweetness to the morning by smearing a little Cream Cheese Raisin Nut Spread on top of your early morning baked goods?
This Golden Blossom Honey recipe is a delicious treat to help start the morning off on a happy note. It's a simple recipe to toss together too. With just a few ingredients you should already have on hand, mix it together the night before, store in an airtight container, and you've got a scrumptious breakfast topping already waiting for you as soon as you roll out of bed in the morning.
Ingredients
8 ounces whipped cream cheese
1/2 cup raisins
1/2 cup pecans, chopped
1/2 teaspoon ground cinnamon
3 teaspoons GOLDEN BLOSSOM RAW HONEY

DeleteThis is something I'd give a very wide berth myself LOL cheese and raisins together sounds like a belly death to me, but I'd eat up all your bagels with a bit of butter if you don't hide them on time from me.

DeleteOh man, that recipe sounds divine to me! I usually steer clear of dairy, but I could handle a few tablespoons of that on some carb worthy bread!
ReplyDeleteMy husband and I comment every day how glad we are to not be dealing with school age kids right now. Glad yours can handle it themselves.
I try to limit dairy too, but cream cheese is one of those things I tend to indulge in. It's such a weakness of mine!

DeleteSure a winner for the morning. Great she can do it and get up and is ready to go indeed. Some of the younger ones has to be a struggle for them and parents. They are all going back full time here. Should be interesting.
ReplyDeleteSome of the surrounding schools are full time, but we're online for the first 8 weeks, then we'll play it by ear. My daughter is happy learning online, so we may just leave her there.

DeleteThis looks amazing! You officially found my guilty pleasure. My favorite unhealthy meal is a cinnamon raisin english muffin with cream cheese and blackberry jelly. I'll definitely be trying this! My kids are going hybrid. It's going to be interesting, and that's me being very kind.

DeleteGlad she's adapted and is taking initiative. I hear complaints from parents that their kids won't!! I'm teaching face-to-face and loving it this year. A cream cheese raisin nut spread before heading in to work sounds smart. ;) Sorry you don't get to see your oldest now until November. Hopefully that time will go fast.
