Angel Hair Pasta with Shiitake Mushrooms

I think we're in a confused state right now as to what to have for dinner. I mean, it's fall now, but it's still too warm for comfort foods and soup. It's getting a bit nippy for firing up the grill though, so what's a girl to do? Turn to her pasta recipes! Pasta is one of those dishes that's acceptable to make year round, unlike, say chili in the summer or burgers in the winter. Pasta is great during all 4 seasons. We're having work done on our house, and in addition to paying our contractor (my brother in law), I have to add in dinner for him each night on top of that too. Having enough for two grown men each night with leftovers for Jason's lunch the next day is a challenge in itself, but with a little crafty planning of inexpensive meals that are filling, we're managing to get by. Last night I whipped up this meal of Angel Hair Pasta with Shiitake Mushrooms for dinner, a recipe found on Golden Blossom Honey. 

 
This is a great meal option for when you're on a budget but want something full of flavor and filling. While pasta isn't usually grouped in with healthy eating, this recipe is chock full of healthy veggies, so it's okay to indulge a little here. The best part is, I was able to make an entire pot of this pasta which equaled out to 5 meals for under $6 total! Toss it into the rotation for Meatless Monday next week and watch how fast it gets gobbled up.

Ingredients

3 tablespoons olive oil
2 green bell peppers, cut into matchstick strips
1 carrot, cut into matchstick strips
1 onion, cut into matchstick strips
3 tablespoons soy sauce
1/2 pound fresh shiitake mushrooms, stems removed, caps sliced
1 clove garlic, chopped
1 tablespoon SILVER BLOSSOM HONEY
1/4 teaspoon dried ginger
1 (12 ounce) package angel hair pasta

  2. You should eat a lot of shitake and reishi shrooms, deary, they is good for cancer and immune system. How is work progressing at the palace?

    1. I do eat a LOT of shrooms. When I gave up meat, that was the main thing I replaced it with, besides lentils. The work is slow going, but we have decided to take October and December off. We'll only do a few weeks in November, then go at it full force again in January. We'll probably be doing a fall tour of Michigan in 2 weeks since it is one of the prettiest states to visit in autumn.

    1. That sounds delish! Yes to apples and sweet potatoes! I was almost 40 before I grew an appreciation for sweet potatoes, so I am totally making up for lost time on those these past few years!

  5. I love mushrooms! This looks delicious. We started Fall cooking with a giant pot of chicken soup this week. This week I added Acorn squash to the grocery list too. Squash is one of the best parts of Fall. :)

    1. Don't get me started on the other house. We decided that with all of the covid madness this year and how stressed we were getting cutting through all of the red governmental tape, we'd revisit our plans of building this spring.

  9. I like cutting veggies into strips. Makes it easier for my youngest to eat the veggies he's not overly fond of... ;) And yes, pasta is good any time of the year!

  10. I love meals that are inexpensive, filling, and homemade. "Healthy" is more of a perspective, if you ask me. I mean, regardless about how you feel about pasta, at least you're not eating Hot Pockets!
