This is not your traditional fruitcake that tends to be heavy on the spices. This fruitcake is flavored with the sweet goodness of pineapple tidbits, dried cranberries, dates and honey. Add in the chopped pecans and you have a recipe for a holiday gift success. This is one fruitcake that when you gift it, the recipient isn't going to spend the better part of the holiday wondering what they've done to anger you. It will be well received, I promise!
Ingredients
1/2 cup vegetable oil
3/4 cup GOLDEN BLOSSOM HONEY
2 eggs
1 1/2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/3 cup pineapple juice
1 cup pineapple tidbits, drained and patted dry with paper towels
1 cup dried cranberries
1 cup pitted dates, chopped
1 1/2 cups pecans, coarsely chopped

Why is fruitcake so hated? I've never understood it, what do they put in it to make it nasty? There was a lovely fruitcake competition on Food Network's Facebook page yesterday, many lovely cakes there.

DeleteI am one of those weirdos who love fruitcake, fake green cherries and all. My parents liked it, so that’s how I got hooked. The trick is just a small wedge from a round loaf. Treat it like a piece of candy.
ReplyDeleteFor non-traditional, I like to use pumpkin as a base with lots of spices. Basically, it’s a dense pumpkin bread with nuts and candied fruit thrown in. Unfortunately, no one in this house likes any form of fruitcake, so I no longer make it.
I think it's an acquired taste. If we grew up on it, I'm sure I would have liked it in my adult years. Sadly, I think the ship has sailed for me to enjoy a traditional fruit cake ever. I might attempt another try at it though if I ever find a round loaf and use your tip for a small sliver.

DeleteYour fruit cake does look very moist. I never had an issue with the flavors. For me, I'm not a fan of the texture or dryness that usually comes with them. Ever have a Pannetone?? Ugh, my family used to shove them down our throats for breakfast every Winter. On the flip side, I used to love making fruit cake with my grandmother because I got to play with a little tool that she uses. It looked kind of like the old school pencil sharpeners that hung on the wall of our classrooms. Instead of sharpening pencils, it would grind down the fruits for the cake.
