I know this is supposed to be a happy time of the year, but for me, it's the most stressful. Don't get me wrong. I love the holidays and family time and even the hustle and bustle the season brings, but trying to get everything done usually leaves me drained. I'll be spending a lot of time in the kitchen making edible gifts for family, friends and coworkers, so the last thing I want to do this month is dedicate a lot of time and attention to complex dinner meals. For the rest of the month, I'll be pulling out a list of 20 minute or less recipes to help me get through December with my sanity in tact. Last night we made Honey Sesame Chicken, a recipe found on Golden Blossom Honey.
Don't let the simplicity of this recipe fool you. While there are minimal ingredients and cook and prep time is actually less than 20 minutes, this recipe is chock full of flavor. I took it a step further and used boxed minute rice instead of messing with the rice cooker to serve the chicken over. This recipe can be modified for vegetarians as well. Just replace the chicken with your favorite meat substitute. There are a ton of great veggie strips to choose from in your grocers freezer that would work perfectly with the sauce here. You could even toss in a few frozen veggie pieces for a little more nutrition and color and still stay under the 20 minute mark. I chose to use Silver Blossom Honey in this recipe because I thought the sweet orange notes would compliment the rest of the ingredients, and I was right. It was the perfect blend of sweet with a hit of bitter from the soy sauce. We'll keep this recipe on hand for a quick Asian inspired meal year round.
Ingredients
1/3 cup floursalt and pepper
1/2 cup peanut oil
2 whole chicken breasts, skinned, bonned and cut into bite size pieces
1/3 cup GOLDEN BLOSSOM HONEY or SILVER BLOSSOM HONEY
1/3 cup lite soy sauce
3 tablespoons sesame seeds
1/3 cup chopped scallions

Do you feel more stressed in December, or are you more laid back around the holidays?
I always love to scallions in the photos, they work up my appetite in no time. We still have them here as well, so I put them in the morning salad with my tomatoes. I'm stressed this December because I'm finishing the book and it has been such a hell to work on.... left me feeling drained and plus we never know what next year brings so there is that worry too....

DeleteWe just ordered this from our Chinese food place the other night. Your version is probably a lot healthier though! We'll have to try a homemade version. I'm going to bookmark this recipe for Chinese near year this year. :) I'm laid back because I do my shopping all year long. I just finished my last piece of shopping with today's Bath & Body Works sale. I always wait for their 1 day candle sale.

How true is that? Us moms put so much of ourselves out there during the holidays to make everyone have a joyous season, even though it drains the heck out of us. I truly hope you're able to see your grand babies this year. This has been one shitshow of a year, that's for sure!

ReplyDeleteThis time of year I’m always a stress mess. Especially since I’m changing jobs, for the 3rd time this year. I’m nervous to go in on Monday. It’s a blessing it’s for the most part remote. It also makes it hard to train.
