Comforting Sweet Potato Soup

Happy New Year! I'm not going to start this post off with all of that new year, new me BS that likes to float around every January. 2020 was hard. Like, really hard. So, I think we all deserve to give ourselves a break. I won't be setting any weight loss goals, won't be assigning myself a word of the year to live by, and I won't be giving myself impossible resolutions that I'm bound to fail by February anyway. 2020 challenged me like no other year that I can remember. If last year taught me anything, it's we need to be kinder to ourselves. I'm usually a rush around and get things done kind of gal, but I learned how beautiful it could be just to stay in doing nothing once quarantine hit. Now that the snow is starting to fall here in the Midwest, I crave doing absolutely nothing while wrapped in a cozy blanket and eating a steaming bowl of soup. For me, soup is the ultimate comfort food. Good for the body and good for the soul. I usually like to have different textures in my soup (cubed veggies, noodles, rices, etc) but I opted for this pureed Sweet Potato Soup, a Golden Blossom Honey recipe, this week.  
 

I'll be honest here and admit that I swapped out the half & half and used heavy whipping cream because I'm not counting calories, remember? LOL. But if you put on a little quarantine weight and want to keep this recipe on the healthy side, stick with the half & half. As much as I love chunkier soups, I think this recipe might actually be my new favorite. It was smooth and delicious, and for being a pureed soup, was actually quite filling. You can make this recipe ahead of time, storing in the fridge and reheating at a later time, so it would be great to make on a weekend for work lunches during the week. 

Ingredients

2 tablespoons olive oil
1/2 cup onion, chopped
2 pounds sweet potatoes, peeled and cut into 1-inch chunks
3 (14.5 ounce) cans low salt chicken both
2 tablespoons GOLDEN BLOSSOM HONEY MUSTARD
1 cup half and half
salt and pepper to taste

Garnish:
finely chopped scallions or chives

    The soup looks so lovely, I'd put garlic in it too! Such lovely photos!

    1. I know, dahlink. December left me no time to breathe. I’ve been feeling awful neglecting responding to comments here and I only had time to get my Golden Blossom Honey recipe posts up this month. I had close to 100 orders through Etsy, Facebook, and personal contacts (many wanting multiple items!) and that’s all I did for most of December. Eat, sleep, create and fill orders. It has finally slowed down though, so next week I should be back to normal with regular posts and blog visits.
      I’ll definitely put garlic in my next batch. Might try a little cheddar or parm cheese too!

    3. I might list a few Valentine's items up, but I think I might just take a month off to recover, get my office back in order, and start planning for the upcoming spring craft fairs. Etsy was never meant to be a full-time gig, but Corona kind of forced it to be during the holidays. I much prefer craft fairs where I don't have to deal with online sales and shipping. They see it, they like it, they want it, they buy it. No fuss and the sale is complete without any extra work on my part.

  2. Looks and sounds delicious! I made a seafood chowder for Xmas eve. One of my favorite recipes. But it will be back to less cheese or more veggies now!

    1. Jason would have loved a seafood chowder. Nobody here eats seafood except for him, so he hardly gets to indulge in it. He ate it up when we were in Boston last summer!

  3. I wonder if you can sub the milk with almond milk? My belly doesn’t do well with too much dairy. I’m glad you learned to slow down. I’m still struggling with that part, but 2020 really has taught me a lot of other things. I feel like if my kids were older, I could have slowed down. Instead we had to speed up even more to keep up with them.

    1. If you do, I would go with unsweetened almond milk. As much as I love almond milk because it it way better for my stomach issues, I didn't substitute in this recipe. If you do try it, come back and lmk how it worked for you?

  6. I heart soup so much! This looks wonderful! On Christmas Eve we always have many soups to choose from. Of course this year was different. I hope next year we’re back to normal again!

  7. I'm sure this would be great to make with my sweet-potato-loving-granddaughter. She's becoming quite active in the kitchen, so she's making cooking fun for even me (and I'm def. not what anyone in the family would call a cook). ;) Happy New Year!
