I'll be honest here and admit that I swapped out the half & half and used heavy whipping cream because I'm not counting calories, remember? LOL. But if you put on a little quarantine weight and want to keep this recipe on the healthy side, stick with the half & half. As much as I love chunkier soups, I think this recipe might actually be my new favorite. It was smooth and delicious, and for being a pureed soup, was actually quite filling. You can make this recipe ahead of time, storing in the fridge and reheating at a later time, so it would be great to make on a weekend for work lunches during the week.
Ingredients
2 tablespoons olive oil
1/2 cup onion, chopped
2 pounds sweet potatoes, peeled and cut into 1-inch chunks
3 (14.5 ounce) cans low salt chicken both
2 tablespoons GOLDEN BLOSSOM HONEY MUSTARD
1 cup half and half
salt and pepper to taste
Garnish:
finely chopped scallions or chives

DeleteI know, dahlink. December left me no time to breathe. I’ve been feeling awful neglecting responding to comments here and I only had time to get my Golden Blossom Honey recipe posts up this month. I had close to 100 orders through Etsy, Facebook, and personal contacts (many wanting multiple items!) and that’s all I did for most of December. Eat, sleep, create and fill orders. It has finally slowed down though, so next week I should be back to normal with regular posts and blog visits.
I’ll definitely put garlic in my next batch. Might try a little cheddar or parm cheese too!
You will need to hire Santa's Helpers next year to achieve all the orders LOL Better start working for Valentines immediately :)
DeleteI might list a few Valentine's items up, but I think I might just take a month off to recover, get my office back in order, and start planning for the upcoming spring craft fairs. Etsy was never meant to be a full-time gig, but Corona kind of forced it to be during the holidays. I much prefer craft fairs where I don't have to deal with online sales and shipping. They see it, they like it, they want it, they buy it. No fuss and the sale is complete without any extra work on my part.
DeleteLooks and sounds delicious! I made a seafood chowder for Xmas eve. One of my favorite recipes. But it will be back to less cheese or more veggies now!
ReplyDeleteJason would have loved a seafood chowder. Nobody here eats seafood except for him, so he hardly gets to indulge in it. He ate it up when we were in Boston last summer!
DeleteI wonder if you can sub the milk with almond milk? My belly doesn’t do well with too much dairy. I’m glad you learned to slow down. I’m still struggling with that part, but 2020 really has taught me a lot of other things. I feel like if my kids were older, I could have slowed down. Instead we had to speed up even more to keep up with them.
ReplyDeleteIf you do, I would go with unsweetened almond milk. As much as I love almond milk because it it way better for my stomach issues, I didn't substitute in this recipe. If you do try it, come back and lmk how it worked for you?
