Ice storms knocked our power out last weekend, this week we've got chaos at the Capitol, and at this point I don't even want to think about what trouble next week is going to bring. 2021, you're off to a real bang! Right now I'd much rather be on a tropical island surrounded by palm trees and a sea breeze. But thanks to Covid, I'm stuck in good old, cold Indiana. Yay. Alas, we will make the best of a bad situation and try to turn lemons into lemonade. Or, pineapple into a tropical breakfast treat so we can at least pretend to be basking on our own island retreat. I found this Pineapple Breakfast Tarts recipe on Golden Blossom Honey and thought that it would be a nice distraction from all of the craziness surrounding us right now.
You'll never see me turning down any dessert wrapped in puffed pastry, and when you add in the pineapple and cream cheese? This has my name written all over it! The directions are written as making two long tarts, but I think if you have a mini pie press, like this one HERE, you can make these into little individual toaster pastry-like breakfast tarts. Would be a little more work, but you'd have a nice seal all the way around each serving that way. Don't like pineapple? I think any drained canned fruit or pie filling would work quite nicely in this recipe. Go wild and try a few different varieties to see what you like best!
1 egg beaten with 1 tablespoon water
1 tablespoon sugar, divided, for top
Filling:
1 (8 ounce) package cream cheese, softened
1/2 teaspoon almond extract
1/4 cup GOLDEN BLOSSOM HONEY
1 (16 ounce) can crushed pineapple drained, or 2 apples or pears, thinly sliced
Ingredients
1 (17 1/4 ounce) package of 2, frozen puff pastry sheets, thawed according to package directions (about 40 minutes)1 egg beaten with 1 tablespoon water
1 tablespoon sugar, divided, for top
Filling:
1 (8 ounce) package cream cheese, softened
1/2 teaspoon almond extract
1/4 cup GOLDEN BLOSSOM HONEY
1 (16 ounce) can crushed pineapple drained, or 2 apples or pears, thinly sliced

DeleteThe good thing about the chaos is that you live in Indie and I figure you are the most armed state there LOL So you should be safe, especially as your state probably leans republican. We storm our parliament every now and then so for us it is something we are used to. I did love those photos of people taking photos in Nancy Pelosi's office LOL and stealing her lectern, gave me such hearty laugh LOL
ReplyDeleteCheese and pineapple combo is a big NO from me, so there will be more for you to munch on LOL I just bought jelly beans in Aldi today, we never had that shit before, nobody told me it is that yummy, now I always have to have a stash. That and Skittles.
We're definitely an armed state. Lots of rednecks here though that probably shouldn't have access to guns do. But, I would probably call my neighbors before the police, who have a really bad response time here. They are always talking about they'll come over guns a blazing if there's ever any trouble.
DeleteI wish I would have known you have a thing for Jelly Beans and Skittles. I would have sent you all kinds. Next year, definitely. Jason is obsessed with Skittles lately. My best friend bought him a huge jug for Christmas and it's nearly gone already!
Da funny thingaling about Skittles and Jelly Beans is that I don't like them all LOL Some I really find disgusting (Skittles sours for example) and some I like (Skittles yogurt smoothes). Some aromas are unexpectedly weird, like lime for example, but I for example really love cream and coffee in Jelly Beans, flavours which I did not even know existed in beans LOL But some flavours are truly nasty, like you wanna spit them out of your mouth. The surprise factor is what suits my novelty loving nature LOL I generally don't eat candies but sometimes when I had a meagre dinner and get hungry at around 9pm I will take a handful of beans or Skittles to munch on while watching one of my shows. Also peanuts dipped in honey and covered in sesame.

DeleteI’m not a huge fan of pineapple, though I do like it on pizza! I’d probably do cherry or blueberry.

DeleteThis looks soooo yummy!!! I would try with pineapple or maybe even blueberries. We have sweet teeth at my house so it would have to be a sweet fruit, and not one that's tart.

DeleteOoh, I would stick to the pineapple. We don't use that enough in recipes because we always eat it as fast as it hits the counter. I love pineapple! Sorry to hear your power went out. That's always a bummer, esp. when it's cold!

DeleteYou need a t-shirt or something. "I survived life without internet for 3 whole days!" LOL We had three hurricanes hit in a row years ago and had no power for 21 days. We didn't care much about internet back then but today we would be ruined!! ;)
