Green Bean Casserole, what do we think of it? For me, it's a no. I know it's a staple at many holiday meals, but to me it just looks like a pile of mush. We decided to push our Easter dinner until this weekend with the kids since nobody was going to be able to make it home for actual Easter. I sent the kids a dinner request text and got a request back from Mariah's boyfriend for.... green bean casserole. Ky, it's not happening. Sorry. BUT, something like Fresh Green Beans with Onions is totally doable!
This recipe from Golden Blossom Honey is great for any holiday meal or for the upcoming summer months where *hopefully* we will all be able to resume backyard BBQ's with our loved ones. It has minimal ingredients, but is super flavorful. And it's so much healthier than a dish smothered in creamed soup! The recipe says the onions can be roasted a day ahead of time, but if you're like me, you're going to want to top your green beans with the onions piping hot right out of the oven. Also, if you're like me, you're going to want to make a double batch because it's going to be hard to want to share this delightful dish!
2 tablespoons butter, melted
salt and pepper to taste
1/2 cup chicken or vegetable broth
2 tablespoons GOLDEN BLOSSOM HONEY
2 tablespoons balsamic vinegar
1 1/2 pounds green beans, trimmed
Ingredients
2 medium-large yellow onions, peeled and cut vertically into 8 wedges2 tablespoons butter, melted
salt and pepper to taste
1/2 cup chicken or vegetable broth
2 tablespoons GOLDEN BLOSSOM HONEY
2 tablespoons balsamic vinegar
1 1/2 pounds green beans, trimmed

Green Bean Casserole, yay or nay?
Looks nom. For some reason green beans give me tummy ache so I eat only the yellow string beans especially if I can find fresh ones at the green market during summer.
ReplyDeleteI love green beans and would be super sad if I had to give them up. Leah used to eat them raw. I can't do that, but cooked I'll eat them all day long.
DeleteI think it’s nasty as well. I’m over fresh green beans, period. It’s the only thing that’s done well in our garden, year after year. Too well. I’m just sick of them now.
ReplyDeleteI’m almost 48 hours post Covid 2 shot. I was fine for first 14 hours and then I awoke at midnight that first night with such a sore arm and body aches. I was never able to go back to sleep. I felt like crap yesterday, but couldn’t decide if it was the shot or only getting 2 hours of sleep. Went to bed at 9 pm last night and woke up 4 times!!! WTH? I had not heard insomnia as a side effect? I did my yoga exercises when I woke up and feel close to normal now. The whole thing was weird. My husband only had a sore arm again.
I heard it's harder for women, the second shot. I've already cleared my schedule for this weekend in full anticipation that I'm going to feel like hell after I get my next shot on Friday. I bet it was a combination of both the lack of sleep and the second dose that made you feel terrible. Thankfully, it sounds like all is ok now, so that gives me hope that it won't be too bad for me either.
DeleteNormally it's a hard NAY for me, but since this doesn't have any creamy, pre-made soups mixed in, I would try it. Those onions look delicious too!

DeleteGreen bean casserole is a nostalgic part of many people's childhood, so I feel like I've got to give it some credit. It is a comfort food. We have a dish like that in my family, called Pink Fluff. None of my friends will touch the stuff, but set a bowl of it down in front of my siblings and cousins, and we'll scarf it up like crazy. Nonetheless, I really like your fresh take on the ingredients.
