I saw a meme recently that said Adulthood Is Saying "Things will calm down after this week" over and over again. That's been me a lot this past year, but more so this past week. I did a huge craft fair last weekend, we've busted our butts trying to fix up the house before the appraisers came out for an inspection, and we finally got appointments for our first round of the Covid vaccine. I am beat! Allison though, in the midst of the chaos of it all, thought it would be a spectacular time to want to bake something. Normally I'd encourage her kitchen adventures, but my kitchen was torn apart since I was trying to get the cabinets and walls painted in a hurry. Teens, I swear! Once the kitchen was done and put back together, we did end up celebrating by making this Lemon Cream Pie, a Golden Blossom Honey recipe, for all of our hard work.
I figured this is a really lovely springtime recipe to keep on hand for when the temperatures start to warm up a little. We had a few warm days here already, but I woke up to snow yesterday which almost caused me to have a meltdown lol. However, my mint is popping up in my garden already, as you can see in my pics, so that gives me hope that warmth and sunshine are on the way to stay very soon. This is one of the easiest pies I've made to date, so I'll be making another for our Easter dinner as well as keeping it on hand for any other events we have coming up this season.
Ingredients
1 (9-inch) piecrust, unbakedFillling:
1/3 cup fresh lemon juice
2 teaspoons grated lemon zest
1/3 cup GOLDEN BLOSSOM HONEY
2 eggs
2 egg yolks
3/4 cup heavy cream
Garnish:
fresh blueberries or raspberries
whipped cream

ReplyDeleteYes, it was shocking 30*C yesterday at noon, but we're having a bit colder weather for the Easter weekend. I wanted to use the warm weather to wash the windows first time since winter LOL but it will rain so I will skip it.
I'll do a kitchen reno reveal post once the rest of my bricks that I ordered come in. I ordered them like 3 months ago, but since nobody is bricking their patios and such (even though mine are for my kitchen) the company hasn't been able to place a bulk order for the ones I ordered yet. So, I have 1/2 a wall complete until who knows when.
DeleteUgh to window washing. It's one chore I despise. Jason usually does them at the beginning of spring and again early fall. Thankfully they don't get too dirty, so I don't have to jump in an do them ever unless I notice the dog nose prints on our screen door.
I have to wash mine like every week during summer and spring as we live in a sandy area and they get dirty when it rains even on the top floor, I guess winds and rain pick up the sand and create mud. It is horrid, and for some reason, whenever I wash the windows it rains next day. I sometimes even use it to help the nation during droughts LOL

5 inches of snow!? Keep it all there. Our false spring then dumped on snow last year, or maybe it was the year before, really impacted all of the blooms in our yard. No lilacs on the bushes, no tulips, hardly any hyacinths. I was super bummed about it. I sure hope your daffodils made it!

ReplyDeleteHonestly, I'd let them use them for free if they ever wanted to go that route. They took a chance on me when I was just scratching the surface of getting my blog up and running and gave me free reign every week to do the pics as I saw fit. This allowed me to experiment and grow in food photography, and that is more valuable than any cookbook royalties, imo.
