Dare I say that while it's not officially summer per the calendar, this heat is telling me otherwise. I love the warmer temperatures, but yesterday I broke down and put the air conditioning on. Hotter days mean it's time to start serving lighter foods because who wants a belly full of heavy food on days that require you to crank on the air? We eat a lot more veggies this time of the year, so having good salad recipes on hand is always a must. I found this 1-2-3 Chicken Salad with Roasted Nuts on Golden Blossom Honey and immediately knew it was going to be a keeper of a recipe for me to use time and time again.
Ingredients
Dressing:3/4 cup olive oil
1/3 cup balsamic vinegar
2 Tablespoons GOLDEN BLOSSOM HONEY MUSTARD
Salad:
4 cups cooked chicken, cut into 1/2-inch strips
8 cups mixed salad greens
2 red bell peppers, thinly sliced
1 cup honey-roasted peanuts, coarsely chopped

It is warm over there? It is completely different here, whole May was Autumnish with constant rain and below 10*C temps at night, it has been raining whole week straight here and it does not go over 22*C during the day. I like it, but people are very angry LOL they want their spring back. I wouldn't mind whole summer like this. I bought a few new hoodies so I need colder weather to show them off, I don't want T-shirt temps.
ReplyDeleteIt is really getting hot here. We had a cold snap that shocked my flowers last week, but they seem to be perking up a bit now that the heat is here to stay. You and Jason and your darn hoodies and sweaters. I just want to wear maxi dresses and run around barefoot all the time. Bring on summer, I say!
DeleteI like to add any kind of berries and pepitas. I’ve also become enamored with those wonton strips that are by the crouton section.
ReplyDeleteI love wonton strips in salad! It really adds a fantastic bit of texture to the dish. You can never go wrong with pepitas. Berries I'm hit or miss on though for salad. I do like blueberries and strawberries in mine every so often, but I'd prefer a berry based vinaigrette over actual berries on my greens.

DeleteMy favorite salad mix in is dried cranberries. I almost always put fresh mozzarella in my salad too so that I can eat it with a tomato for the ultimate flavor. Mozzarella and tomato is probably one of my favorite things to eat. This does look delicious and honey mustard is one of my favorite dips so I'm all in on this one.
ReplyDeleteYes to both mozzarella and tomato on salad. Though sometimes I switch it up and do feta instead for a different kick of flavor. But always, always, always have tomato on my salad.

DeleteWe have salads all the time. This looks good. The only thing we have to wait on is seeds of nuts. Isaak gets his braces off next month. Then we can add either of those.
