In the words of Taylor Swift, "I don't know about you, but I'm feeling 22!" Actually, I'm not, but Wednesday is Mariah's 22nd birthday. On top of her birthday, I am a super proud mama since not only did she graduate from Purdue University with a bachelors degree in biochemistry last month, but she also landed the job that she was hoping to get fresh out of school. All of these big things in her life is a definite cause for celebration! Since she is here for the week, I thought it would be a nice time to make this Mocha Ice Cream Pie, a Golden Blossom Honey recipe, to reward her for all of her life's accomplishments.
This pie has all of her weaknesses wrapped into one cool, creamy, dreamy dessert. I have never known her to turn down coffee, chocolate, or ice cream (she practically bit my head off in Ireland when I helped myself to more than my fair share of her cone, but that's a story for another day LOL). I really can't think of a more perfect pie for her. The recipe didn't call for it, but I thought the top needed to be dressed up a bit, so I topped the pie with some chocolate shavings, but I also think it would be fun to decorate with chocolate covered espresso beans for an even more elegant touch. Or, leave it plain. The coffee and chocolate ice cream combination packs a ton of flavor into this recipe, no extra toppings are necessary taste-wise. Plain or fancy, you simply can't go wrong here.
Ingredients
Sauce:1 cup unsalted butter
1/2 cup GOLDEN BLOSSOM HONEY
2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon vanilla
1 cup walnuts, chopped and toasted
3/4 cup semi-sweet chocolate chips
Crust:
15 Oreo cookies
3 Tablespoons unsalted butter, melted
Filling
1 pint coffee ice cream, slightly softened
1 pint chocolate ice cream, slightly softened

ReplyDeleteAs of right now, she does not want to pursue any form of higher education. For the last 17 years she pushed herself to not only take the hardest classes she could, but to try to be at the top of her class. She's burnt out now and says no more school. However, I think if she takes a few years off and learns more in her job, she may be compelled to go back for her masters at some point. Especially if she wants to go higher in her field, they will require a masters at that point.
DeleteThese are normally huge accomplishments, but to graduate and land your dream job during a pandemic is an even bigger feat. Congratulations!! She deserves 20 of these ice cream pies. I'll take a slice to go too, please. :) :)
ReplyDeleteThank you, Jax. It was years of hard work on her part, but now the fruit of her labor is about to come rolling in. We couldn't be more proud of her. We'll send a slice over now, but can't guarantee it will make it in one piece LOL.
