Mother's Day isn't the only day that I look forward to in May. This month I'll also be celebrating my 18th wedding anniversary. Special days call for special meals, and for me you can never go wrong when pasta is on the menu. I like a good pan of lasagna or fettuccine, but I just found this Pasta Elsa recipe on Golden Blossom Honey and thought it sounded like something that would be easy enough to make for a week night family meal, but sophisticated enough to serve for special occasions.
I love artichokes, but it's one of those foods that are too much work for such little payoff. So when I can find a recipe that calls for canned artichokes, I'm all over it. I think they were my favorite part of this recipe, but there is so much goodness tucked into this dish, it really was hard to decide what I liked best about it. If you're still trying to find that special dish for mom this Sunday, look no further. Mom is going to love this Pasta Elsa. After years of making sure you ate good and healthy, this would be a great way to return the love to mom this year.
3 Tablespoons olive oil
2 cans (28 oz.each) Italian tomatoes, chopped, with their juice
1 teaspoon dried basil
1 teaspoon dried oregano
2 Tablespoons fresh parsley, chopped
1 Tablespoon GOLDEN BLOSSOM HONEY
2 jars marinated artichoke hearts, drained (cut in half)
1 package (2.25 oz.) pine nuts, toasted
2 Tablespoons capers
1 head broccoli, cut into bite size pieces
1 pound ziti or penne pasta

4 - 5 cloves garlic, chopped3 Tablespoons olive oil

1 teaspoon dried oregano

1 head broccoli, cut into bite size pieces

ReplyDeleteThank you, dahlink. I'm not sure what we'll do this year. Everything seems to be opening back up in Indiana, so we've got options. We may end up going to the Irish restaurant a few towns over if I don't feel like cooking that day.

ReplyDeleteLooks delicious! What wine are you drinking? Our favorite wine has been Papi, it's a cabernet but is sweet and light. Makes for a good compromise because I like sweet when most everyone else prefers a dryer taste. The pasta does look delicious but I'm not a fan of canned artichokes. I'd probably swap them for frozen ones without any vinegar based preservatives.

This wine, I believe, is from a local winery. It's a sweet red with notes of cherry. I don't normally like red wine, but I buy a bottle or two of that one every year. There's a cheap white wine from Oliver with blueberry notes that I drink the most these days. It's around $10 a bottle on sale, so very inexpensive, but even my white wine hating daughter loves it.

ReplyDeleteI like pasta. My downfall is that I typically make too much. I cook too much pasta, potatoes, and oatmeal. I just can’t get my quantity right.
ReplyDeleteI have a hard time with that too, but at least the leftovers Jason usually takes to work for lunch so it never goes to waste.
