Summer Fruits with Sour Cream Topping

Summer berries. Is there anything better about the season than plump, juicy berries? I find that I have more motivation to try new recipes in the summer, and I think that it's because of the wide variety of fresh fruits that we have access to during the warmer months. From breakfast to dinner, you can always find a recipe that includes berries and other fruits, so you can easily take advantage of the bounty that good Mother Earth provides us this time of the year. I usually snack on a small bowl of fruit after dinner since it helps curb my sugar cravings and keeps me from reaching for chocolates or ice cream to satisfy my sweet tooth, which tends to go into overdrive as I'm winding down for the evening. Lately, my go-to for evening snacking has been this Summer Fruits with Sour Cream Topping, a Golden Blossom Honey recipe. 


This recipe said to arrange the fruits on plates, but I really like to layer my fruits parfait style in a wine glass. It just feels a little more sophisticated, I think. I would normally use Greek vanilla yogurt on top of my fruits, but this recipe calls for a sour cream and honey mix, which was a surprisingly delightful change of pace for me. The recipe also called for sliced almonds, but for this photo shoot, both Jason and I were itching to dig in, I forgot to sprinkle them on top. I didn't realize it until we were both halfway through eating our fruit cups. Don't be like Theresa. Remember the almonds because that extra bit of texture is what pushes this recipe over the top. This is one of those versatile recipes that you can change up all season long and never grow tired of it. Swap out the raspberries for blueberries or the grapes for kiwi. Whatever you little heart desires, toss it into the mix and thank Mother Earth for fruity gifts she bestows upon us every summer.

Ingredients

2 Tablespoons GOLDEN BLOSSOM RAW HONEY
8 ounces light sour cream
1 pint strawberries, sliced
1 pint blackberries
1 pint raspberries
1 bunch seedless grapes
2 Tablespoons sliced almonds, toasted
mint leaves

  1. Looks gorgeous but that is something that would give me the poopsies with that sour cream and fruit combo LOL
    I've just about spent all my raspberries in just a week, the rest is all dried up and dead as we've had a whole week of 50*C temps with no rain, it is 30*C in my hall and bathroom, I feel like Imma gonna die this summer. They say it will go down this weekend, but I've never ever had such temps within the house before and AC does not help as it is my room and we had an open hallway and staircase.

    1. I'm sorry you're suffering! We had a few weeks of hellish temperatures, but it has drastically dropped the last two weeks. I haven't had my air on but a few days here and there. Even my petunias have withered and died because of the cold and rain :( I'm hoping that giving them a massive deadhead trim will bring them back to life this summer. Hopefully our cold weather moves your way and you can find some relief soon!

    2. Our petunias always die quickly, we're too hot here for them. We've just had a major storm here after all that ungodly heat, some cities are without power, roofs are gone etc. It has passed through here half an hour ago and I hope it will cool down the temps for the weekend, but they say we are back to hell next week again. I was quite afraid as in Czech republic they had a tornado yesternight and even dead people and some of our villages have been snowed in by ice this afternoon, hope it won't be too bad tonight as I feel more rain is coming. We should switch as I know you love your hellish heat LOL

  3. My fave has always been raspberries, but I can no longer eat them :( My second fave is peaches and I’m looking forward to fresh ones in another month.

  4. I agree. The fruit definitely does look extra posh when served parfait style! That being said, my favorite is to just snack on plain blueberries like one would do with potato chips. I'm boring! lol

  5. You could try using plain Greek yogurt instead of sour cream. We use it all the time. Sometimes I put a squirt of lemon or lime in it to make it taste more like sour cream.

    This does look great. I’m a sucker for summer fruits. There are so many more options than winter.
