Rain, rain, go away... I do love me a good summer rainstorm, but Geez Louise it's been nonstop for over a week here now. It seems like half the country is bathed in scorching temperatures and the rest of us are downing from all of the rain. Anyone want to swap for a bit? With the Independence Day weekend now upon us, you might be getting a little worried that the weather is going to ruin your BBQ plans. A little rain never hurt anyone, but it really isn't fun to be standing outside in a downpour flipping food around on a grill, right? So, if Mother Nature doesn't let up by Sunday, you might want to keep this Honey Baked Chicken recipe from Golden Blossom Honey in your back pocket to help save the day.
If you can't toss some chicken on the grill, the oven method is just as easy and just as good, if not better. I like the simplicity of this recipe since it has minimal ingredients and it doesn't require me standing in front of a grill flipping meat around when I'd rather be sipping sweet tea and mingling with my guests. Just pop it in the oven and the work is done. I'll light a few fireworks to celebrate that!
Ingredients
3 pounds chicken (pieces you prefer) or 2 whole chicken breasts halved4 Tablespoons butter or margarine
1 teaspoon salt
1 teaspoon curry powder
3/4 cup GOLDEN BLOSSOM HONEY MUSTARD

Poor chick, her life maybe wasn't sweet but death sure is with all that honey LOL Sorry to hear about the storms. We had one a few days ago, my roof leaked as usual, but now we are having a few mild days after two weeks of temps higher than in Canada currently. I haven't even eaten regularly for two weeks as I did not have the strength to sit beside the stove.

DeleteLooks like a simple, but yummy dish. My husband is firing up the smoker this weekend, so lots of meat is in my fridge right now. I’m making cowboy caviar pasta salad, honey mustard broccoli salad, watermelon salad, and strawberry shortcake. I’m tired of the rain, too! Hope your holiday weekend is spectacular!

DeleteHow did you get the chicken so crispy without using the grill? The last time that I made something similar, it was soggy and chewy. It didn't cook right for me in the oven.

Honestly, I didn't baste it like the recipe called for. Letting the skin dry out during cooking time, then giving it a light baste towards the end to reintegrate some of the flavoring was what I did here.
