Is it just me, or do lily stalks look like huge weeds? I've never paid much attention to them before, but I got some bulbs on clearance a few years back and tossed them in my flower beds in front of my house and said, "Let's see what happens here." I probably should have done some research first because I didn't realize how big the stems grew. Mine are currently standing at over 5 feet tall and Jason has been itching to rip them out because they've been quite an eyesore for the past few months. Alas, this week they finally bloomed and boy are they gorgeous! And they smell amazing, too! Every time I walk off my porch I get a huge whiff of their aroma and it gives me total tropical vibes. That made them the inspiration for selecting this week's featured Golden Blossom Honey recipe, a delicious Tropical Coconut Cream Pie!
If you're still in pandemic mode (as most of us are) and haven't been able to book that tropical getaway, I'd say this pie is the next best thing. It has all of those island flavors that will have you dreaming of hammocks between palm trees swaying on the beach. If you're not into experimenting in your flower beds like I did, (once the blooms all die off I will be relocating my lilies to a better location in my yard), that's okay. I'd encourage you to experiment with this recipe though. If you want to be a bit extra, throw some chopped maraschino cherries into the mix, or swap out the mango and use pineapple instead. Play around with your favorite tropical fruits and see what you like best.
Ingredients
1 9-inch pie crustLine a 9-inch pan with crust and bake according to package directions.
Filling:
1/3 cup SILVER BLOSSOM HONEY
2 eggs
1 egg yolk
3 Tablespoons flour
1 1/2 cups milk
1 1/2 cups flaked coconut
1 teaspoon almond extract
1 1/2 cups whipping cream, chilled
Topping:
1 ripe mango
1 Tablespoon GOLDEN BLOSSOM HONEY
1 teaspoon lemon juice

Lilies can get really big, we have a few that are not just over 2 meters tall but also have flowers bigger than my head. Some white, some orange, and a few dark violet, almost black ones. Kala lilies are also in bloom currently.
ReplyDeleteThe pie really looks lovely, coconut and mango are the way to go in the summer indeed. I'm currently using a mango caramel liquid soap for hands.
I'd love to get my hands on some of the black lilies. I'll have to go on the hunt for some now.

Mango and coconut are big winners for me! I love lilies, but so do the deer, so mine are long gone. They are lovely though.
ReplyDeleteMy husband wants to go to Bora Bora or Tahiti, wherever they have those huts on the water. I’d rather have a shorter flight to Nevis. I visited there at age 18 when it was a little known island and I’d love to go back.
I just saw a travel deal for one of those tropical water huts and told Jason that we needed to book it like right now. Unfortunately, since one of our boxers is paralyzed in her hind quarters, travel will have to wait until she's no longer with us since I just don't trust anyone to take care of her right now but us.

I love your pictures and this pie looks super pretty, but I'm not a fan of coconut. It's one of my favorite scents, but I just don't think it was meant to be eaten. lol! Luckily, our lilies only grow about 2 feet high, but my neighbors have the ones you're talking about. I complain that their house looks like a jungle, and then when they bloom, I get jealous that they're house looks so pretty! I guess tall lilies are a love hate relationship.
ReplyDeleteI have to respectfully disagree about coconut not being made for eating. It is one of my favorite things to eat. I mean, I'll even eat the shavings right out of the bag LOL. Both of my girls will agree with you though. Whenever I'd make something with coconut, they'd turn their nose up and pass on the dish.

DeleteI have beaches and stuff here. No need to spend money to go anywhere lol except for maybe when there is snow. 5 feet tall must sure obstruct the view, even with a pretty old smell.
