I've seen the grumblings about it being pumpkin spice season all over social media, but can we all just agree that it's also soup season and that's a cause for celebration? Allison's been sick for 2 weeks with a nasty sinus infection and I haven't been feeling my best either, so we've been comforting ourselves with lots and lots of soup here. While we'll eat canned soup in a pinch, nothing beats a bowl of homemade soup when you're not feeling well. Grilled cheese sandwiches and tomato soup is usually my go-to meal for sick days, so I thought that this week would be the perfect time to try this Tuscan Tomato and Bread Soup, a recipe that I've been saving from Golden Blossom Honey for just the right occasion.
Aside from being one of the easiest soups to prepare, omg it smells amazing when it's cooking! My house smelled like a pizzeria by the time I was ladling it into bowls. Honestly, if pizza came in soup form, this would be it. So, so good! If you have lots of tomatoes in your garden still, you could easily blanch them and swap them out for the canned portion of this recipe. Also, my curbside grocer shopper gave me thinly sliced French bread instead of the unsliced that I had ordered, so I ended up using croutons in this recipe instead of cubed bread. I think it worked perfectly fine, so if you don't have French bread on hand, it's a great substitute. This soup was so comforting, we'll be keeping the recipe front and center of my recipe box since I'm sure we'll be making this frequently when cold and flu season rolls around.
Ingredients
2 1/2 cups country Italian bread, cut into 1-inch cubes1 tablespoon olive oil
4 garlic cloves, crushed
1 (28 ounce) can whole tomatoes, chopped with their juice
2 cups vegetable broth or chicken broth
1 tablespoon balsamic vinegar
2 tablespoons fresh parsley, chopped
1/2 cup fresh basil, chopped
1 teaspoon dried oregano
1 tablespoon GOLDEN BLOSSOM HONEY
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese

DeleteOmg, I love tomato soup!! But, no one else in my house will eat it, so I have to resort to buying Panera’s, which is a damn salt bath. I’ll have to give your recipe a try! I think I do prefer a chicken noodle when sick, though.
ReplyDeleteYeah, I have a hard time with anything other than homemade because of all the salt. And restaurant soup is pricey! Jason made me chicken broth and noodle when I was sick this week and it really is comforting when you’re ill!
DeleteDeary, tell Alys to dice a few onions, put them in a bowl, and then cover herself over it with a towel and inhale it for about ten minutes, but with CLOSED eyes! Everything will come out and her sinuses will be fine in no time, seriously! She just needs to close her eyes so that the onion does not burn them. It is nasty but efficient and quick.

I made french toast today and lentil soup. I don't it it often as I don't eat eggs, but sometimes, usually once in six months, I will get a terrible craving for french toast and I had it today LOL Had to buy me a carton of eggs for it. I even left some for dindins which I will eat with some scallion tomato salad.
I need to follow your onion trick! Allison was on a strong round of antibiotics that kicked her infection to the curb in a day. I don’t like to take them so I’ll get me some diced onions and a towel and see what happens. I’m at the tail end of my sinus infection now as all the gunk is about out, but next time, for sure!
DeleteOnce a year I also get a craving for French toast. It’s not my favorite thing to eat, but that craving really is crazy, isn’t it?

ReplyDeleteTravis didn’t plant tomatoes this year, but we’re getting some anyhow. Volunteer ones. Ha! I’ve been processing them, and put them in the freezer. I did add some to zucchini.
That’s so cool that you still got tomatoes! I’ve never been lucky enough to get volunteer anything in my garden. Travis should come teach Jason his tricks. I got Costco soup the other day because heat and eat is about all Jason can do in the kitchen lol
DeleteI do love me some tomato soup, but my favorite is butternut squash! We take eggs, mix them in (raw) into the soup, and then boil. The egg sucks up the soup. Then we put a dollop of ricotta on top. It's sooo yummy!
ReplyDeleteOk, I have to try this. I love butternut squash soup but have never put eggs in or ricotta. Just some heavy cream and maybe nutmeg here. Your way sounds divine!
