We have a big weekend ahead of us. It's Jason's birthday tomorrow and Allison's birthday on Sunday. That means I am going to be busy in the kitchen making special meals all weekend long. Allison wants hot wings for her big day (y'all she is going to be 18 and I just can't even with that situation!) but Jason is more of a breakfast kind of man, so we'll be pulling out the waffle maker on Saturday and getting down to business. Breakfast bars are fun to do since everyone likes different toppings on their waffles, and this time around instead of having blueberry compote as the only fruit topping offered, I'm going to add in these Spicy Stewed Fruits, a quick and simple recipe from Golden Blossom Honey.
This recipe is so dang easy, I don't think I could find one easier if I tried. I bought a bag of Mariani mixed fruits (link) since it had everything that I like already in the bag. But you can definitely buy any combination of dried fruits that you like for this recipe. The spicy stewed fruits don't have to just be served over waffles either. They are great for serving over other breakfast dishes, desserts, or heck, just eat it on its own! As we go into the new year, it's the perfect healthy snack to keep on hand for those of you who have eating or diet resolutions you want to stick with.
Ingredients
2 cinnamon sticks4 slices fresh lemon
1 pound mixed dried fruits (apples, apricots, figs, peaches, pears, prunes)
2 1/2 cups apple juice
2 Tablespoons GOLDEN BLOSSOM HONEY

DeleteLooks nom on them waffles! That being said I cannot believe Jason loves sweet breakfast! I'm scandalized LOL I would've expect he'd prefer a savoury one as we're usually in agreement :) I do not consider anything sweet as breakfast or lunch, just a desert. And I also cannot believe Allyzabeth is already off age, wasn't she but a kid only yesterday??? Or maybe we've just know each other for such a long time.... And then we have your birthday as well next week :) Hope you get my parcel before that or that very day.
ReplyDeleteHe does not love a sweet breakfast, always opting for hash or bacon or toast. He does like waffles with fruit topping occasionally though.
DeleteI judge how time flies by watching blogger friend's kids grow. I'm always shocked when they get their first job or drivers license or are off to college because 12 years ago when I started blogging they were just babies to me then. Sigh. And time marches on.
Wow, 18 is a big pill to swallow! Happiest of birthdays to them both! The waffle looks just as delicious as the stewed fruits. This is one that I'll have to try.
