A day late and a dollar short. That seems to be my motto lately. But you'll agree that it's okay once I share with you this week's Golden Blossom Honey find. As I've said before, Jason and I don't celebrate Valentine's Day, but I was feeling inspired this week to whip up a sweet treat. And by inspired, I mean I noticed a small $5 container of raspberries going bad in the refrigerator and needed to find a recipe to use them in pronto. Thankfully I was able to salvage them by making a Chocolate Mousse Terrine with Raspberry Sauce.
Chocolate and strawberries are what most people put together for the day of love, but raspberries are every bit as good, especially when you're pairing them together in this dessert. I've never made a mousse in a loaf pan before with the intentions of it coming out firm, so I kind of freaked out when I thought my batter looked a little too runny and ended up mixing a tablespoon of milk into a tablespoon of cornstarch, then added it into the chocolate mixture as it was warming on the stove. I'm sure it would have set fine in the end without the cornstarch, but sometimes a girl just doesn't want to take any chances when she's got a sweet tooth the size of the pot holes in New Orleans and she's really looking forward to dessert. The end result was pure perfection, and one that I may have to have a tradition of making every Valentine's Day from here on out now. And even though Valentine's has passed, don't dismiss this recipe just yet. We have Easter and Mother's Day on our heels, and it's never too early to prepare ahead!
Ingredients
Mousse:2 cups heavy whipping cream, divided
3 egg yolks
1 (16 ounce) package semisweet chocolate chips
1/3 cup GOLDEN BLOSSOM HONEY
1/2 cup butter
1/4 cup confectioners sugar
1 1/2 teaspoons vanilla
Sauce:
1 (10 ounce) package frozen raspberries, thawed
1 Tablespoon GOLDEN BLOSSOM RAW HONEY

What's your favorite fruit to pair with chocolate?
Mine was always raspberries and chocolate, but I have to avoid them now due to the oxalate. I do think chocolate and orange is a nice flavor combination.

DeleteI knew you'd be scandalized by my letting the berries almost go bad. I'm horrible with fruit these days. We have them in the winter, but they tend to rot a lot faster than fresh berries that we get in the summer.
