Linguine Gorgonzola with a Medley of Nuts

February. How did we get here already? It's the shortest, coldest month, but it's the month of love, so there's that, right? Jason and I used to go out for dinner to celebrate the date many moons ago, but the older we get, we would much rather sit snuggled on the couch with a homemade meal while binge watching whatever series we've fallen behind on. Maybe because Valentine's Day always gives me Lady and the Tramp vibes, we almost always have some kind of noodle for the occasion. Even before we got too old to deal with the crowds, as a rule we never went out for Italian food because it tastes just as good when it's homemade and it's way less expensive when you make it yourself. For example, it easily costs $15 for a bowl of pasta and cheese for one at the local Italian restaurants here. Throw in a glass of wine + tip, you're at $30 for one meal. Good grief! For much less than that, you could make a pot of Linguine Gorgonzola with a Medley of Nuts, a Golden Blossom Honey recipe, and have a nice Valentine's meal for 2, plus generous portions of leftovers for lunch the next day. 
 
 
Don't get me wrong. I love dining out as much as the next person, but not during peak holiday hours and definitely not for dishes that are simple and inexpensive to make at home. While most of the pasta dishes I make are tomato based, I like switching it up from time to time with either goat cheese or a homemade Alfredo sauce. I hadn't tried making a sauce with Gorgonzola before, but wowee! I was loving every bite of it. If you're staying in this Valentine's Day, add this linguine to your menu. If you're trying to impress your love on a budget, you can not go wrong with this recipe! 

Ingredients

1/2 pound Gorgonzola cheese, cut into pieces
1 cup half and half
1 Tablespoon GOLDEN BLOSSOM HONEY
1 pound linguine, cooked al dente
freshly ground pepper
1/3 cup walnuts, toasted and chopped
1/3 cup hazelnuts, toasted and chopped
1/3 cup pine nuts, toasted
1 cup Parmesan cheese

  1. I was thinking this would be good with pine nuts and then bam! I saw that it does use them. This is a recipe after my own heart. I love the combo of pine nuts and Gorgonzola. Pinning it.

    1. I'm always amazed at the amount of punch pine nuts pack for being such a small nut. It really adds to much oomph to this dish!

  3. We always went out, but the last 10 years or so, the crowds have been ridiculous and you can’t get a reservation anywhere. I normally get seafood when we go out because I find it the most expensive to buy at the store anyway, and hard to find good recipes. I try to make a nice meal for hubby on VD with a special dessert, usually involving chocolate and cherries.

    1. Jason's the same way. He'll almost always opt for seafood because it costs almost as much to make at home as it does to have it while dining out. Chocolate cherry desserts would make the day that much sweeter. You do a black forest cake occasionally, don't you?

  4. I had a cat called Gorgonzola once, a relative of my cat Vlasta.
    It is very strange adding honey to a cheese dish, I'm borderline scandalised by it, but I do love the birds eye view of the second photo, I love lots of details in such photos.

  7. This looks so refreshingly good. I made something vaguely similar once before, but it didn't have quite this kind of flavor, and it certainly didn't have gorgonzola. Sounds out of this world!

  10. Valentine's Day is probably the only holiday during the year where I won't be spending it in the kitchen. My husband usually takes me out, or will at least order out. I'm not one for cheese sauces, so I'll be skipping this one.
