Polenta with Mushroom Ragu Sauce

It's a running joke here that you have to check the expiration date on foods before consumption in my house because I have a really bad habit of steering off course from our meal plans and tend to forget about the groceries I had purchased for said meals. My pantry was turning into a real hot mess, so this week was all about getting organized and using up foods that we've had in the cupboards for a bit. I found a couple of tubes of polenta and can't for the life of me recall what exactly I had in mind when I bought them in the first place. It's not a food we consume often, but I must have had a recipe I wanted to try that involved polenta at some point. I decided to head to my trusty source at Golden Blossom Honey and found a recipe that sounded too good to pass up. That's how we ended up making Polenta with Mushroom Ragu Sauce for dinner this week.  
 
 
Meatless Monday will never look the same once you've added this recipe to the lineup. I love me anything having to do with mushrooms, and this ragu is a newfound favorite. It's rich, hearty and flavorful, and not only pairs well with baked polenta slices, I know I'll be using it in some future pasta dishes, too. It goes to show that even when you're a disorganized train wreck like me, that can be the inspiration to fall in love with new recipes like this one. 
 

Ingredients

1/4 cup olive oil
1/2 cup onion, minced
3 portobello mushrooms, discard stems, halve and slice caps
1 teaspoon fresh rosemary, chopped
salt and pepper, to taste
1/2 cup Chianti or other dry red wine
1 (28 ounce) can whole tomatoes, chopped with their juices
2 tablespoons GOLDEN BLOSSOM HONEY

2 (16 ounce) tubes prepared polenta, usually found in produce section
2/3 cup Parmesan cheese, grated

  1. I would absolutely love that meal, but I can’t say I’ve ever seen a tube of polenta!

    I used to be like you with the expired jars in the cupboard, esp at our last house because there wasn’t a lazy susan where there should have been in the corner cabinet. Cans got pushed out of reach quite often, so I had no idea what was back there. I’m more organized here and try to keep the older foods near the front. Plus, we now have pull out drawers!

    1. I have pull out drawers and stuff still expires. Sigh. I found the tubes at Trader Joes. If you have that store near you, I'm sure yours carries them as well.

  2. For some reason I don't really like polenta, but yours does look nice. I'd much rather stuff my face with that bread on the right LOL Isn't two tbsp of honey a bit too sweet for a savoury dish?

    1. The honey is just the right amount. I probably could have added in another tbsp but I love sweet, though not everyone here does so I left it as is.
      I need to lay off the bread for a bit. I really hit the carbs hard during quarantine and I'm a little worried my summer clothes aren't going to fit me this year. Eeek!

  3. I do love some polenta! This looks delicious, especially with the mushroom ragu. My pantry doesn't get cleaned out often, probably because I have a home full of beasts that don't let anything sit long. LOL
