I don't know how Mother's Day is sneaking up on us so fast, but it really is almost here and I don't feel as prepared for the day as I would like. Unfortunately, I'll be working out of town that day, so I'll either have to have Jason make flower deliveries to our moms without me, or I'll have to push time spent with them until the following day. I prefer the latter because it seems like I don't spend nearly as much time with my two favorite ladies as I would like these days. If we wait until that Monday, in addition to our normal gift of flowers, I can add in extra time spent with each mom while sharing a light snack of Fruit and Nut Tea Sandwiches, a Golden Blossom Honey recipe, as we catch up.
Our moms are just like me and prefer consumable gifts over dust collectors, so flowers and a snack are always the most well received gifts in our family. The nice thing about these fruit and nut tea sandwiches is that there is hardly any prep involved and nothing needs to be cooked, unlike other consumables like cookies or pie. And for someone who is really busy, that's a blessing in itself. I've been finding really sweet berries in the produce section this month, but if strawberries aren't in season in your area just yet, you could add a touch more honey to the mascarpone mixture, or even swap out the mascarpone for cream cheese. You could also swap out the strawberries for any other berry of your choice for flavor that's more suited to your taste with equally delicious end results. These little finger sandwiches are so perfect served with a steaming mug of tea while catching up on the latest family gossip at mom's house. Or at your own house if you can convince your kids to get in the kitchen and do something nice for their mama next Sunday.

1 (8 ounce) package mascarpone cheese2 tablespoons GOLDEN BLOSSOM HONEY
1/4 cup pecans, chopped
rasin bread, pumpernickel party bread, crackers
strawberries, sliced
seedless grapes, halved
fresh parsley for garnish, if desired

Yes, the comment box is freaking terrible. There are a few websites that I am having a horrible time with because of it. I am sure our comments will go even further down now because of the change :(
DeleteYour page is especially terrible, deary, because it sometimes takes up to two minutes for the links and photos in your sidebar to upload and if you don't notice that and start typing a comment the page will eat it up when the page uploads fully :) I have noticed that some of my commentators are sent directly to spam probably because they don't understand the new comment box and try commenting a couple of times which Blogger immediately sees as potential spamming. It is horrible. At your page and others I have to close all protection on Mozilla in order to be able to comment. They are making our lives tough.
DeleteJust another nail nail in the coffin for bloggers. I was having such a hard time on my oldest blog friend’s page the other day. Like, my comments would not go through for 2 weeks and I’m still having issues there. Maybe it’s a sign it’s time to pack it in and move in.
DeleteLovely tea sandwiches and display! I’m helping my son and his wife move on Mother’s Day weekend. They will be 1.5 hours closer to us, so that’s a good thing! My oldest daughter invited me and my mom over for brunch this Sunday.

ReplyDeleteSome are! Honestly, I don't know if these are. I just yanked them out of my grass, but Allison insists there's a TikTok recipe that uses them, so maybe? My cat also likes to munch on my flowers. I never knew they chewed them up until I got a kitty of my own.
DeleteOh my goodness, they are so cute too. I am pinning it to make these when my daughters -in-law come to visit. Both of the bigger boys ended up with girls who are fancy, so these will be right up their alleys (and I love them too...the girls and the tea sandwiches, lol). I guess I thought the kids would end up with a 'let's gather at the park or in the backyard by the pool and have a bbq' kind of ladies. That's my favorite scene, but I like a little bit of fancy too. :)
