Is it too early to start celebrating Cinco de Mayo? If you live in my house, the answer is no. I'm pretty sure I've consumed my weight in guac, chips and margaritas this past month. I love Mexican food and if I had my way, we'd eat it every day. I've been trying a few different side dish recipes to go with our tacos and enchiladas, and one that we all seem to enjoy regularly here is this Mexican Rice Salad recipe that I found on Golden Blossom Honey.
What's nice about this rice salad is that it's one that you consume cold, so it can be prepared a day ahead of time and it's ready to be eaten right out of the refrigerator when you need it. This is a recipe that I'll make a big batch of so we can have it as a side dish for dinner, but then there are plenty of leftovers for my lunch for several days afterwards. It's good for lunch. It's good for dinner. It's good for Cinco de Mayo. I mean, there really isn't a bad time for Mexican Rice Salad!
Ingredients:
Dressing:
1/4 cup olive oil
1/4 cup fresh squeezed lime juice (1 large lime)
2 tablespoons GOLDEN BLOSSOM HONEY
1/2 teaspoon ground cumin
Salad:
2 cups cooked long grain or basmati rice, cooked
1 can (15 ounce) black beans, drained and rinsed
1 cup frozen corn, thawed
1 cup plum tomatoes, chopped
1 cup carrots, finely diced
1/4 cup fresh cilantro, chopped
1/8 cup scallions, chopped
salt and pepper to taste

DeleteWe don't eat Mexican food here on the other continent, but I do love canned beans in salad or hummus. It is Orthodox Easter here this weekend, so it is a non working Holiday and the next weekend will be too as well as May Day is huge here. That is three non working Mondays given the Catholic Easter too this week LOL

DeleteWhat do you mean you don't eat Mexican food!? I can't live without tacos. And burritos. And guac. And all the other delicious Mexican foods. When I switched to vegetarian, it was all the Mexican food that helped me acclimate to the diet change because you can substitute beans for meat in so many of their dishes. And I know Taco Bell isn't real Mexican food, but when we traveled and had to eat away from home, we would have to find a Taco Bell because it's the only fast food chain with a dedicated vegetarian menu. We even had to seek it out in Iceland LOL.
Only one survived, I think it is a girl, which I don't need next to Vlasta and her mother. I was hoping it was a lil tomcat, an heir to Ignatius and his dynasty.
DeleteThat looks totally yummy! Chips and guacamole are one of my fave foods, too. I do love the real refried beans that you can only get at authentic Mexican restaurants.

DeleteThis looks delish. I don't think I've ever had a rice salad. I like that it uses black beans. Those are my favorite.

DeleteI've never had cold rice, but this sounds delicious! I'm going to have to try this one pronto. I'm not sure if it's a Mexican side dish, but I lovvveeee fried sweet bananas and fried ice cream!

Fun fact: we don't really make a big deal out of May the 5th. Our big party is always Mexico's Independence Day: September 16th.
